In this video I will be showing you how to make the best spatchcock chicken with an easy weeknight recipe! This is THE BEST WAY TO MAKE CHICKEN! HOW TO MAKE SPATCHCOCK CHICKEN: (See video for full visual instructions)
- Start by prepping baking pan with grates at bottom to keep chicken off bottom, add 2 cups of chicken broth to catch drippings and prevent from drying out
- Preheat oven to 350 degrees Fahrenheit
- Remove chicken from packaging and remove any giblets/bags from inside
- Place chicken on cutting board back side up
- Feel for backbone top to bottom
- Cut out backbone on both sides using kitchen sheers, then open up to expose inside
- Make a small incision in the breastbone (see video)
- Flip over and press gently on the breastbone area to crack bone and flatten
- Flip back over to pat dry inside of chicken
- Season inside area generously with your favorite seasoning or rub
- Flip over and pat dry outside skin area well, season generously as well
- Place chicken in baking tray on top of rack
- Insert your meat probe to monitor temps and setup cook on App (if you have one)
- Cook chicken at 350 until it hit around 145-150 degrees Fahrenheit, then crank up the oven to 425 degrees Fahrenheit
- Once chicken hits 160-162 degrees Fahrenheit, DOUBLE CHECK TEMPS WITH AN INSTANT READ THERMOMETER for safety! Once verified in the DEEPEST, COOLEST part of the breast, remove from heat and allow to cool for 5-10 minutes (depending on how hungry you are lol)
- Carve and ENJOY!

    Honestly love this technique and it’s so good for a weeknight cook. My mom would do a similar cook but she would roast the potatoes in the chicken drippings. Makes my mouth water just thinking about it
