Ingredients:
Poolish Starter:
• bread flour 150g
• water 150ml
• yeast 0.5g
Main Dough:
• Poolish starter
• bread flour 250g
• all-purpose flour 100g
• sea salt 8g
• sugar 18g
• milk powder 18g
• water 145ml (use ice water in summer)
• yogurt 20g
• yeast 4g
• unsalted butter 24g (add later)
• Black or white sesame seeds, or black truffle paste for topping
Filling:
• butter 39g (cut into 3g strips and refrigerate)
• A small amount of beaten egg for brushing the dough
