*Ingredients*
- Bread Flour 285g
- Salt 5g
- Milk Powder 8g
- Sugar 20g
- Yogurt 10g
- Room Temperature Water 170ml
- Unsalted Butter 17g
- Instant Yeast 3g + 10ml Water
*Instructions*
1. Mix the bread flour, sugar, salt, milk powder, yogurt, and room temperature water in a bowl for about 3 minutes until there are no dry particles.
2. Place the dough in the refrigerator at 4°C for about 1-2 hours.
3. Remove the dough from the refrigerator and add the butter. Dissolve the yeast in 10g of water and add it to the dough. Mix all ingredients thoroughly until the final dough temperature reaches 26-28°C and can be stretched into a thin film.
4. Let the dough ferment at room temperature for 1 hour or until it doubles in size.
5. Perform the first shaping, dividing the dough into three long strips, each weighing about 175-180g.
6. Let the dough rest for 15 minutes.
7. Perform the second shaping.
8. Place the shaped dough into a toast mold for the final fermentation until it reaches 80% of the mold's height.
9. Brush with egg wash and sprinkle with sesame seeds
10. Preheat the oven to 180°C and bake for 35-40 minutes.
11. Fresh, soft toast is ready to be served!
*材料*
