Look for German chefs for „krustenbraten“ or even Chinese chefs - that isn’t the best and he didn’t shows the real tricks to get it real crispy. Search for example at the channel „taste show“ - „easy crispy pork belly by masterchef“ - he shows u the tricks behind a crispy pork belly and it’s much better… and if u want a sauce - as said search for German chefs

As of reading this comment now? No this is my first time watching. Will I watch it again in the future? Most likely yes. Although I'd be curious as to see what would happen if I used his method of roasting pork belly but instead of his Diamonds I used the chinese method of making siu yok for the skin. In my experience, the crisp is a lot more pronounced and I have a childhood attachment to it. I also wonder how it would taste if I started introducing some asian herbs and spices into the mix like five-spice.

Recipe works perfectly, even with slight variations. I used celeriac instead of fennel as I'd finished my autumn crop. I used a piece of frozen demi glace plus boiling water instead of stock. And I chose to sieve the gravy rather than keep all the solids in. The biggest challenge I found was turning the pork belly over during the searing process!

This is such a great recipe. I'd never done pork belly before though I am a fan of the slow roast. Meat was perfect, top was golden and crispy, gravy delicious. I added a chopped apple to the vegetable base, and a small onion. I strained the gravy. Used supermarket chicken stock, which worked perfectly well (though I'm sure homemade stock would be even better). Served it with roasted Jersey Royals, mash, green beans and carrots. I love the speedy and no-nonsense approach in the video, and the lack of exact measurements gives a lovely freedom.

dragoncrystal24 I get what your saying, some of his recipes are out of reach for budget shoppers, but this one really isn't. Pork belly is cheap and if you can you whatever flavor profile you want if you do not want to go with the fennel/bay/anise one he did. I think this vid is more about showing a way to cook a cheap cut of meat that is also often considered undesirable that the actual recipe.

1kg pork belly Sea salt and black pepper 1 fennel bulb, trimmed and roughly sliced 4 fresh bay leaves 3 garlic cloves, peeled and bashed 1 tsp cardamom pods, bashed 4 star anise 1 tbsp fennel seeds Olive oil 325ml white wine 500-750ml chicken stock (depending on the size of your pan) 1 tbsp wholegrain mustard

Just made this tonight. Amazing flavor. Couldn't find cardamom pods; substituted ground cardamom. Turned out great! May have been something I did or my particular cut of meat, but... Although the skin was very crispy, it was still too chewy to really be edible. The rest though... it was literally falling apart tender as I was trying to remove it from the roasting pan! Served with roasted garlic parmesan potatoes and grilled asparagus. :-)
Cooked this with my grandma, totally worth the time spent on it.

@@RacingShoggoth Actually, since he mostly lives in the USA, he uses Farenheit for his audience. Remember how he said "Slow roasted". 180°C is like 350°F, which is not a slow cook.

I've tried making roast belly of pork so many times before and it never really works very well. I get the blow torch out or pop it under the grill but it never crisps up like it should. But this recipe was amazing. Easy to make. Succulent pork. Crispy cracking. My family loved it. Big thanks #gordonramsey.
