Salt cured egg yolks are fresh egg yolks that have been stored in a salt mixture for some time until they solidify and become almost like a thick jell. After that, we can dehydrate them even more until they reach a consistency that enables us to grate them like we do with hard cheese. People say that their flavor reminds of cheese, so they use them in a similar way in salads, sandwiches, pasta dishes and risottos.

    Hi guys! These yolks can turn out quite salty. For less salty eggs yolks you can use 2 cups salt and 2 cups sugar.

    In a survival situation, the amount of salt and sugar are probably worth more than a few egg yolks. In past times, there were places where, pound for pound, salt was worth as much as gold.

    I wonder if you can stack them vertically in a mason jar. You could potentially do entire layers of smaller yolks from quail or bantam chicken eggs.

    Saw another recipe that just coated the inside of their egg shells (cleaned) with salt. Only needed half a teaspoon each, then extra just to top off.

    It’s better to cure them with soy sauce and mirin (sweet sake) it tastes better and doesn’t waste salt.

    Zastock, sea salt is not bad for us. Bad science led to the demonisation of salt. Our bodies can easily cope with salt - if we have too much then we get thirsty, drink water and our body gets rid of it. Drinking too much water is far more dangerous. Sea salt contains every single mineral we require. Societies that don't have access to sea salt have higher mortality rates than those that do.

    I live in a country where it is recomended to cook eggs very well due to possible contamination with salmonella. Are the eggs OK to consume in that case or will the salting process kill any bacteria?

    From what I know, the salmonella bacteria is in the egg white not the yolk.

    Asians soak yolks after in high alcohol liquor to kill bacteria after this process for what I am told, not sure if that works

    The salt will kill the bacteria because it will take all the water from the cells (the egg cells and the bacteria cell too), and you will bake it too... you will not consume it "raw"

    If it's coarse you can put it in food processor to make it more fine. Then it will be okay

    Don’t use the salt mixture for any other purpose. You can re-use it for curing yolks, as long as you remove all the moisture. If you use only salt then you can bake it in the oven until it is completely dry. If you use a mixture of salt and sugar, then it is best to dehydrate it in the oven using the oven fan and at a very low temperature (50°C / 122°F) because the sugar can melt and turn into caramel

    As long as your eggs arent touching the bottom of the container they're stored in to cure you can use way less salt.

    @@jomsies maybe cause this isn’t salted egg ? How you use them is different from your typical salted egg that’s made is Asia. Asian salted egg it’s possible to eat it on it’s own though most people pair it with porridge I like to mix them with tomato like a salad or just treat it as side dish with rice this you usually shave or grate it(cause as the idiot op said it’s really salty cause it was ment to be really salty) and use it as seasoning usually in pasta or meat. Just grate some of it like it’s cheese and it will add that salty eggy flavor to a dish. You can probably still use this for porridge just grate some on top and mix it.
