    "80% water, light in your belly" was what sold me. I love a light pizza, where you can put a full one down and still feel like you can run a mile after. Beautiful.

    Pizza Romana is my absolute favourite, I can't understand why it's not more popular and more pizzerie that make it. It's almost impossible to find here in Melbourne, I only know of 1 place. Bravo Marco, truly an artist. Does he have a pizzeria in Sydney?

    PiscesMystique Sage of course, good thing of pizza in pala is that doesn’t need to have high temperatures like other style, can be done at home easily with 250degrees which is the temperature of mostly the home ovens!

The thing is that I don't seem to find the flour nor the cheese here in México. I usually buy imported/specialty products like this in USA, but because of the pandemic, the border is closed so I cannot go there to find them. ¡Send me a kilo bag of flour!... even better... ¡one of your delicious pizza! 😆🙈

    I am making this right now. A total of 2kg flour is a lot to mix with my kitchen aid stand mixer! If I was to cut the recipe in half, would the yeast quantity be half as well? I know that sometimes yeast is not measured the same way if we double the recipe or reduce it.

    Carino il video ma stavolta ho io una domanda. Ma perché ha aggiunto ulteriore lievito se ha usato la biga già ? La biga si usa se non si vuole usare il lievito

    Ciao Vito, In effetti con una percentuale alta di biga come nel caso della pala non sarebbe necessario, ma per esigenza di tempistiche ristrette nelle riprese (e comunque quando voglio andare in forno dopo poche ore dal rinfresco) solitamente mi aiuto con una percentuale di lievito anche sul rinfresco.

    For making the ciabatta bread in the recipe, you can use all-purpose flour or bread flour as a substitute for ciabatta romana flour. Both of these flours have a similar protein content to ciabatta romana flour, which will give the bread its structure and texture.

    Going to try this. The hydration is 80% but in the video the amount specified is actually 75%. At 5:38 Marco adds the water to the biga he says 640mls but in the caption it comes up with 600mls. Which one is correct?

    Use this recipe, instead of stretching flat as Pizza, after the final shaping shape into a round one, place on a tray and cut it. After the proofing cook it at 250 first with humidity then down to 180-170 for 30mins
