How to Make Quince Jam / Jelly Turkish Style

Quince Jam has a unique flavor and natural color, making it my family favorite among winter jams. Quince dessert, on the other hand, is another famous dessert in Turkish cuisine and it has the almost same flavor as its jam version. Hopefully, I can show you how to make quince dessert sometime as well.
I will show you how to make the perfect quince jam with all tips to make it soft, bright in color, and jelly consistency. If you're interested in learning how to make quince jelly / jelly Turkish style, then this is the video for you! This easy recipe is perfect for beginners, and you'll love the delicious results!
Ingredients:
About 1 kg. (5 big quince)
2 cups water
4 cups sugar
2 tbsp lemon juice
(1/4 tsp citric acid) I use it when the lemons don't have enough acidity.

I love this. I eat this with Avocado , quince jam and salty slice of hard cheese on a bread. Also eat this with Samosa. Very versatile and lovely flavor. I add Clove and Cinnamon to jelly for little twist.

In 2008, I visited turkey and discovered the quince jam at Sekerci Cafer Erol in Kadikoy. I brought back several jars in my suitcase and have never been able to find anything similar in the U.S., even Turkish brands. This recipe is it! I can’t wait to try it on bread when cools. Delicious! PS All but 4 seeds in my 5 quince were mildewed, so I put 4 - 5 strips of the peel in the pot to thicken the jam.

It really looks soo yumm😋. Quince is very good for heart health. The only concern is the sugar, so much sugar, which is not good health wise, specially for diabetics 🥺

I've been dabbling in jams and jellies for a couple of years now. Grabbing pectin from the grocery store shelf. All of the recipes I have seen in my books call for it. So I assumed I would always need it. It wasn't until this video where it dawned on me, it's the seeds that it needs! Which brings me to my question. What about the seeds at the end of the cooking period? Do you remove them one by one or have they softened to the point that you do not need to?

@@TFT i followed the receipe but i didn't use citric, acid, I use lime juice and abit of lime rind, ( 8 quince total) i use all the seeds for the pecting, and I put them in regular glass jars is that ok? Thanks in advance.
I prefer to grate the quince instead of slicing and cutting them in cubes,, i recommend this also

I have never eaten quince, that I remember, although, I lived in Türkiye for two years, in a somewhat rural area, and I may have eaten quince and not have known that I ate it. I ate many things in Türkiye that I had never eaten before, like sheep brains (with some much older men who invited me to join them) and those quick fried little fish that boatmen sold at the ferry docks in Yalova (I loved those fish.) I ramble on in tangents when I recall my time in Türkiye, because I loved living there so much. Anyway, back to the quince. Another person I know told me that there is a Turkish saying that "to eat the quince " is used as an expression that means "to get into serious trouble?" Is this true? And what is the real meaning?

When you eat quince, it has no too much watery and harder than Apple and it May stuck in the throat easly,,, slicing it thinly and keeping a glass of water nearby would be good,,, when you Faced a problem in a short time and easly that means you ate a quince,, now its stucked find a solution

I couldn't see how much fruit you ended up with because I kind of just peel them and I didn't measure and then I reserved two cups of liquid 4 cups of sugar in it but I didn't know how much fruit that was already cooked could be put into that mixture

Hi dear, the recipe amounts are for whole fruit. I dont scale after peeling and coring. Just simply add whatever you have. Turkish cuisine is more simple. Hope you enjoy
What kind of bread do you eat it on? Flat bread? Pita Bread? Sliced bread? toasted bread?

We only eat Orange jam with bread only when my father bring it from shop otherwise it is not common in here. There are so much jam can't even hear before. Hope Allah help me to go to Turkey and try Turkish food.

I believe there is nothing close to quinces on flavour and smell. They smell just heavenly, I find it very addictive. And the flavour is just unique.

Sounds interesting
Maybe switch out the seeds for commercial pectin since they contain a substantial amount of cyanide. A small batch is probably not a problem, but don't scale the recipe up.

I made noyaux recently and learned that cooking the seeds in the oven destroys the cyanide making property. I think it would work here too. Interestingly, some people think eating this "toxin" helps rev up our immune system. Like you said, one likely wouldn't consume that much.
