I have made these for over a year now - thank you so much for this video! I have a stand at the local farmers market and people come to my stand JUST for these pitas! ❤ they are SO good! I changed the recipe ever so slightly to deal with my extra large batch and use a tortilla press before rolling it out :) also i do 3 at a time on a cast iron pizza stone on my stove top. I've found the dough rises in about an hour. Also 3 burners going around medium low is perfect for super soft pitas. Perhaps they take a bit longer but it avoids burn marks. 68 pitas and 100% poof rate this past week 👍

getting the skillet to the right temperature is the trick after you've mastered making dough. And make sure you are not hungry when watching this, otherwise you might find yourself making pitas at 3 am. lol

EDIT: The pitas turned out great! I cooked a half-batch and put the rest of the dough in the fridge for later. I made 6 small pitas and 4 puffed, so not bad for the first time on a griddle. I always try a recipe as written the first time, then tweak if needed, so since I use higher-protein King Arthur flours the dough was a bit drier than yours. Next time I'll add a bit more water to get a stickier texture so it's like what you show. Going to do it again next week! So glad I found your video! I'm an experienced home bread baker but had only tried pita once a few years ago, where the recipe finished with baking in the oven. I only had a 50% success rate on the puff, but I'm betting it'll be much higher on top of the stove! There's just 20 minutes left in the first rise, so I'll update my comment in about an hour to let you know how they turned out. THANKS for such a clear video, and for including tips on how to correct anything that might go haywire. (I've taught computer software and sewing for years, and just wanted to add that you are a GREAT teacher. 🙂 )

After several failed attempts at getting pita to puff before watching this video, I got pitas to puff! Hurray! A landmark in my baking progress! It was healing little holes that did it, and handling the pitas more gently, and flipping the pita before bubbles developed on the first cooked side--all shown in this vid.

@@VicToria-sd1dn yeah, its really good. Already using this recipe in my meals for close to 2 years. Just make sure your pan or w.e. is very hot, like the hottest it can be and be careful with the doughwhen flipping/moving like in the video said as i was surprised how soft it was and just went right trough them at the start, those 2 were biggest issues to me. Otherwise i highly recommend it, a lot of my friends i gave to taste it really enjoyed too.

All the details that are really important in bread, but which a lot of people skip because they take them for granted... for them it's easy. I've never seen such a clear description of the way a dough should be, for example. I've been looking for your roti lesson.. I'm sure if it was as good as this I could get it right.

I have tried several youtube videos for making pita bread but was not thrilled with my results until I found your video. I really appreciate your details like how to test the dough for hydration by how it sticks to fingers and Im convinced that the detail about the griddle being very hot is the reason for many of my previous failures. Ive been making pita pockets since forever and have watched many videos, yours is the first that explain all eventualities!!! A BIG BUNCH of thanks. Thank you so much for this wonderful recipe. I live in Toronto, Canada and haven't been able to go to my favorite bakery to buy pita bread for the last 3 weeks. We usually buy our bread from a local Persian Store, but because of the outbreak, we are avoiding most places. My husband jokingly asked me today if I could bake Pita Bread.....I thought I'd look up the recipe on KZread and here we are. Your tutorial is easy to follow and has given me the courage to try it and bake my very first bread tomorrow. I hope it turns out right. I have a small pack of all purpose flour that I bought months ago. But first I have to search my kitchen cabinets to find the flour. Wish me luck.

This is by far the best video I’ve seen on how to make pita! I think I can do this now :) I’ve never heard the tip about cracks letting steam out before, I think that will really help
