How to Make Pineapple Fried Rice - SUPER EASY & DELICIOUS

This is a signature dish featured in many southeast asian restaurants around the world for a good reason: it is visually beautiful, interesting and absolutely delicious!
Using a fresh pineapple as a bowl, hollowed out and refilled with the pineapple plus vegetables, rice, eggs and (if desired) meat or seafood, this dish engages people with its playful and aromatic presentation.
The amazing thing is that this is a very easy-to-make dish, so impressing your friends and family with it will be much simpler than it looks!

    Looks great! Very colorful, too. I am curious, did you keep the inner pineapple core to cook with or did you toss that part?

    Interesting since I always toss the inner core....I thought for some reason that eating it makes your throat itchy or something...lol

    Oh yes, I know! When I was small my mom told me not to eat the core since it would make my tongue itchy, so until now I still don't eat it raw. But I think it's ok when it's cooked because I use the core in fried rice and soup and it doesn't seem to bother my tongue or my throat :D

    Those are green beans, but you can skip them if you don't like beans :)

    Fried rice is a highly customizable dish in Asia. You can add or omit ingredients however you like. I know many people who like fried rice with only rice or rice with eggs, and of course you can always add cashew, raisins, seafood, meat, etc if you'd like.
