So this recipe is for dipping which is why theres so much PB. My personal recipe is for pasta and noodles and has less because it's eaten hot (peanut butter is super oily and will very quickly break a sauce), plus it adds chopped peanuts. I highly recommend, it's beginner friendly and only takes a couple tries to perfect to your preferences. If you haven't had spicy peanut sauce, you haven't lived. I take a tiny bit of oil and fry some garlic while pasta is boiling. Then I take it off the heat and add some peanut butter, rice wine vinegar (or lime juice, or other vinegar - just really needs the acidity), sambal oelek (a chili garlic paste, but you can just use extra garlic and add chili flakes) a tiny bit of soy sauce, sugar (necessary, especially if you buy no sugar added PB), and pasta water for consistency. Then I add chopped peanuts and one stalk of green onion, sliced somewhat thin so it can be in every bite. Just finish the pasta in the sauce. No seasonings because every imbalance in the flavor can be solved by adjusting one of the ingredients (don't underestimate the power of sugar). TRUST ME. I make this at least once per week. It's a nice, carby go-to.

Wrong Noodles... The noodles you're using is bean thread Vermacelli which is used in Chả giò (Vietnamese Egg Rolls) You need to use Rice Vermacelli noodles for Vietnamese Spring Rolls 🫠 (HOPE THIS HELPS ANYONE WANTING TO MASTER VIETNAMESE SPRING ROLLS) 🥰

This is noodle he's using is called bean threads made out of mung beans. This is not the correct noodle. You should use rice vermicelli. And for sauce you must use hoisin sauce preferably the Koo Ching brand is best. One part hoisin sauce, 1 part peanut butter, 1 part water, minced garlic. Simmer over heat. Let cool then add Sriracha right before eat.

Josie Dudouit, the wrappers seem to come in different thicknesses, she has probably had lots of practice, and another youtuber suggests wrapping the spring roll once, then immediately wrapping it again in another dampened wrapper to prevent breakage.

Not about practice, well that helps, but literally only dip 3 seconds each side. I’m telling you, makes a world of difference. It may seem like they are still hard but they soften while filling.

The ingredients are on the lower left side of the screen. Unfortunately, some of them are underneath a short red banner, hidden. Hint: it's saying to use rice vinegar, not cider vinegar.
