1 do not pour cold milk into hot caramel 2 spread the popcorn on tray before mixing with caramel 3 use cream instead of milk for better result 4 salt is the best friend of caramel (edit: very tiny bit ofc)

Yeah you generally don't want to 'cook' dairy. If it's on a stove, add it at the end and don't use more than the residual heat. It will just burn and curdle and separate if you fry it. - whether it's cheese, milk, cream, butter or yoghurt. These recipe channels are always scams

@@EsoteriaHealing Not really. Those things are only 'milk' by name. It's fine as flavouring in coffee but the chemical properties are different. They don't emulsify or bond in the same way.

Wow!!Yummy caramel popcorn....

I'd suggest an alternate method of popping the corn. Heat up the oil in a pot first, and put just 3 kernels of corn in. After the third kernel has popped, put the rest of the kernels in and remove it from the heat. (Don't turn the heat off.) Shake the pan to keep the kernels moving in the hot oil for 30 seconds, then return it to the burner. Continue giving it a little shake every few seconds or so. The kernels will start popping in rapid succession after a bit, and the whole thing will pop up so fast you will have very few burnt or partially-popped kernels.

@@barbarasanders7965 You don't, really. If a kernel has a weak spot or breach in the husk, it won't build up enough pressure to pop properly. It'll either just partially pop, or not pop at all.

Deceiving thumbnail. I clicked because it suggested you were adding the milk to the seeds and I was intrigued, turns out it was a lie. Also, milk with caramel is just dulce de leche, which is delicious but not so much with popcorn, I wouldn't recommend it. Plus it's super sticky, so forget about eating those with your hands.

No, dulce de leche is NOT caramel with milk. It’s a product made by very, very slowly caramelizing sweetened condensed milk. The color in dulce de leche is only partly from caramelized sugar, most of it is maillard reaction of the milk. That’s why it has a much less caramel-like flavor than its color would suggest.

Sugar+fat+milk, and guess what is added on this video?? Sugar+fat+milk Also, dulce de leche is NOT made from condensed milk, and if its done that way, its not true dulce de leche, its just burnt condensed milk

Adding milk to caramelized sugar is how you make caramel sauce, this is basic af. Dulce de leche is when you heat milk with sugar TOGETHER over a long period of time, completely different preparation and result.
