    To get the rice extra crispy I make it a little bit ahead of time and then spread it out on a dinner plate and let it dry a little bit and get to room temp before it goes back in the pot for the final step. So good!

    I mix a Korean soy sauce with the pepper paste and use it as dip for raw vegetables. Its a really bold flavor that is so addictive.

    I am glad to know ceramic cast iron dutch oven will work for dolsut bi bim bap since I have an induction burner and ceramic or stone won't work. I put the lid on and keep it on until black smoke comes out. Then I just crack in the eggs at the table, they will cook from the heat when you stir them in, no need to fry them. I hope it doesn't trash the dutch oven heating it so high.

    I’m Korean and I’m happy a bibimbap recipe was featured by ATK. I think they did a great job of streamlining the recipe, especially for serving multiple people at once, and by limiting the toppings to a more manageable number. However all the additional sugar was not necessary. Store-bought gochujang has enough sugar, and the vegetables are not supposed to be cooked in a sweet soy sauce mixture. You wouldn’t put tablespoons of sugar in a chicken noodle soup, would you?

    Shiitake mushroom stems: cut or pull them off, let them air dry for a few days, when completely dried out, grind up and put in burgers or soups to add umami. You put a LOT of sugar into that dish, especially when you consider the sugar already in there. FYI, sugar is considered a culinary "cheat".

    @@nutritionalyeast704 Totally incorrect. Can you cook an onion until it's salty? No. Can you cook an onion until it's oily? No. *Can you cook an onion until it's sweet? Yes.* There are many ways to get sweetness in savory dishes, and sugar, is a cheat. Also, it's far worse than using natural forms of sugar like dates or, uh, proper cooking techniques. Sugar does NOT add flavor. It makes things sweet, period. Unless we're talking deserts, it's a cheat.

    That looks SO HEALTHY too. Adding this to my vegan (except I eat eggs) diet. THANK YOU for introducing this to me. So exciting! "The mac and cheese of Korean food except it's healthy." This is exactly why I love learning about asian cuisine. Flavor without the animal, more flavor I would argue and euphoric due to all the flavors. Plus HEALTHY with the veg. YEAH

    I'm trying to think of something I could substitute for the carrots. Not really crazy about carrots in anything but Carrot Cake. Any suggestions? It looks delicious except the carrots. What about some shredded cabbage. Still crunchy cabbage.

    Bibimbap is very forgiving. That’s the beauty of it! You can basically put whatever you want to mix (bibim) it. Feel free to omit the carrot and add cabbage. You can even add fresh salad leaves. What Jennifer says is totally right. Enjoy 😉

    You could probably do without cooking carrots and spinach. Sitting in the Dutch oven long enough will wilt the spinach and steam carrots. You could also not clean out the pot. The fond may help with flavours whilst still creating the crust. it all gets mixed in the end.

    To crisp the rice, it takes at least 10 minutes. 2 minutes is not enough time. Crispy rice takes this dish to another level.

    You could try a combination of worcestershire and oyster sauces. You might also be able to find a soy-free "soy sauce" at a local health food store.

    I was under the impression that at least Kikkoman soy sauce was vegan. If you are allergic to the seafood (there is no seafood in quality soy sauce, just fermented soy beans, wheat, salt and water) and not the soy then Kikkoman should be fine. (please research this first, as I don't want to be the reason you end up in hospital!!) If you need soy free products you can try coconut aminos.

    @@angko-pe I am allergic to soy . The response is painful and lengthy but not deadly . I am also allergic to seafood which is deadly . I have not anticipated that a possible alternative to soy being seafood based . Sorry for the misunderstanding.

    Great job. I can be on with mixing it before serving or not having meat. But up until the end, it's when it departed too much from tradition. The egg goes on top after the serving. The best part of letting the person run the egg and drizzle the gochujang after... This is more the ratatouille of Korean food, not mac and cheese. Leftover Korean side vegetable fried in a dish. Otherwise, thanks for sharing my favorite dish.

    The funny thing is that ATK doesn't stick to recipe rules even with classic American dishes. They always play with recipes, use different seasonings, substitute hard-to-find ingredients, etc. Yet for some reason people expect them to be very, very strict when making dishes from other countries.

    Oh dear God, you people are so annoying! Bibimbap is a simple bowl of white rice topped with sauteed vegetables (often leftovers) and chili pepper paste, soy sauce, or sometimes fermented soybean paste, usually with a raw or fried egg on top that's all mixed together before eating. And that's exactly what they made. Is their version exactly the same as you would find in the average Korean home? Maybe not. So what? Bibimbap is not a formal dish with one dictated recipe that MUST NEVER VARY. Even if it were, this show does not religiously stick to any foreign or even American recipe. They make a version that they think is good and close to the original idea and taste of a given dish. This is clearly and repeatedly explained. If you can't get this through your thick skulls, please stop watching this show at once. You will never be happy with it.

    You mean after cooking the spinach and mushrooms but before crusting the rice? Seriously? If so, yes, she did that so the rice would get a nice crust in the hot oil but NOT taste like the burnt leftovers of the vegetables that were cooked right before. It made perfect sense. Not all residue is "fond" and not all fond is good or useful.

    Dude, have you seen Korean pizza? Not saying there is anything wrong with it, but come on! A nation that does that to pizza, and still calls it pizza doesn’t get to be offended by other nations bastardizing their food. And from many accounts I’ve read about ‘western’ dishes in Korea, pizza is just the tip of the iceberg. Every time you cook an established dish, you are reinterpreting someone else's food, be it you grandmother’s, a Korean grandmother’s, or whoever’s. This is the internet age, if someone wants to make more ‘authentic’ Dolsot Bibimbap, there are tons of resources to find online.

    This recipe is so sloppy and so far away from the Korean taste cooking preferences. Each veg should be treated with care making sure the flavors, colors, etc. don't mix. You want to be able to taste each ingredient and retain the crunch. LAZY

    Why I clicked the dislike button. Mainly you do not explain whatever it is. You say the name so quick I am unable to understand how it is pronounced. Speak English please!! The description does not provide any help to discern what it is either. It seems that you think we are suppose to know all these foreign dishes and their names. If I watched the video it would probably end up with ingredients that I do not know and can not purchase locally anyway. I am sure that where it comes from they really enjoy it. If you make an American version of this dish then I would at least watch it.
