* 75g salt
* 30g sugar
* 1 tsp caraway seed powder
* 1 tsp dried marjoram
* 1/2 tsp white pepper
* 1/4 tsp of ground nutmeg
* a pinch of clove
* sausage casing of choice
* 500g fatty pork, like neck
* 1 egg white
* 50g ice cubes
* 1 Tbsp seasoning
* 2 Tbsp cold water
* 50g concentrated tomato paste
* 40g apple sauce
* 1 tsp Worcestershire saucestershire
* 1 tsp balsamic
* 1/2 tsp salt
* 1 tsp sugar
* 1 tsp curry powder
* 50g water
* 2 tsp turmeric powder
* 1/2 tsp mustard seeds
* 1/2 tsp coriander seeds
* 1/2 tsp fennugreek seeds
* 1/2 tsp cumin seeds
* 1/2 tsp fennel seeds

Fries ftw!! 🤤 potato salad also mouthwatering. What I really enjoyed also was the sauerkraut in Germany ! Have to return another time.

    Years ago I traveled to Germany for a classical music festival. In the end my most favorite part was the currywurst. I fell in love with it and the country of Germany on the first bite. I hope to make it back soon! Thank you for the vid. Subbed!

    Dude....I'm a cook and I lived in Bavaria for a year and a half. Your series are absolutely spot on. There are (almost literally) 0 doner shops in the states. The market is wide open and I have been thinking for years that the best way to introduce them to the doner is by just having it called a sandwich shop. Anyway, I digress. Thanks for covering the classics and I can't wait to see what else you share with us.

    quick tip: put all of the sausage casing on the end of the sausage maker, then roll it off as you fill it. don't try to squeeze the meat down the casing. I think I'm going to have to try this recipe though.

    Yeah, that will definitely make your life easier. And extruding the sausage out onto a moistened metal sheet pan so it doesn't stick while you're filling the casing.

    Enjoyed your video, was raised in Berlin, but moved to the US 50 yrs ago , the Currywurst prep I remember was no case sausage they sprinkled curry powder, paprika worcestershire sauce and ketchup over it . That is the way I have made it here . Thank you

    When I got to Germany to visit family, I always eat currywurst! I LOVE IT! I live in MN, USA, so there's no currywurst anywhere around here. Very excited to try your recipe next time the craving hits!

    Tbh, if you don’t mind the „heresy“ you can basically use any sausage and turn it into Currywurst. The bigger part, imo, is the sauce. Either spice up ketchup with chili/pepper and curry powder, or make it from scratch (sear finely diced onions, add some tomatoes, add ground black pepper, pinch of salt and curry powder and other spices to your liking). Bottom line is, if you have access to any kind of sausage, tomatoes/ketchup and curry powder or paste…you can make Currywurst. Don’t let your dreams be dreams, just do it :)

    Agreed - I subscribed based on the kebab video.. ..but after I saw there as a whole stack of other videos I was drooling over. Hadn't actually looked at the subscriber count, until you mentioned it.. ..on the bright side we can always claim we were here first :)

    If I had to suggest what strikes a visitor to Germany as "different" - and unfortunately I've not been to Berlin, so this is based on Dusseldorf & Munich (just saying, if any of this is applicable/useful). 1) Lack of beer choice. I mean this as a good thing. Beer comes in 3 flavours Light/Dark/Wheat - not corporate branded. Unlike a lot of the world where there the same beers are available everywhere, your choice of venue in Germany defines what you'll be drinking. Venues are not interchangeable - the preference of brewery/beer-type will shape where you should drink. 2) Food. Schweinshaxe with a dumpling the size of your head is immeasurably better than the British "packet of crisps" to accompany drinking. What's maybe unique though to Germany (well maybe similar to Spanish tapas), are all the small plates of food you can get with your beer. I'll accept this may be less magical to the locals, but as a visitor it's great to be able to spend an evening sat in once place, flagging down passing beer and food, and just paying based on a shredded beer-mat at the end of the evening

    @@mynameisandong Definitely one of the better places I've randomly gone for work. The one that stands out is raw pork mince (from google, I guess it was "Mett") France does raw beef, middle-east does raw lamb - but I'd never had raw pork before. The beer definitely helps lower the barrier for trial (it was delicious). In the morning I'd escape the misery of a hotel breakfast in the local Kamps (yes, I know it's not a family owned bakery) - but way better bread and coffee than my mid-priced hotel. Then after work "a beer or two"... which takes me back to my post above. You didn't mean to go out for the night, but you find yourself at a nice table, in a nice bar. Then the nice staff with the eternally full tray of "tiny beers" keep swinging by, and they're so tiny.. what harm could another do? Then you think you should probably eat dinner, but they come around offering some delicious little plates that stave off the hunger...and then you realize you should have been in bed hours ago, your beer mat looks like a doily, and when you try to stand your legs seem to be malfunctioning slightly. Fortunately small stalls supplying fortifying wurst seem to have magically appeared lighting the route back to your bed. I never acquired the taste for curry-wurst (too sweet) - but have fond memories of regular delicious sausage selections on those bits of card that are 'almost, but not quite' a plate - and a selection mustards to dip them in. Life-saving.

    @@mynameisandong Yes, Düsseldorf, so suspect similar to Köln based on geography. Maybe another interesting thing about Germany I'd not really considered - is that there is still a lot of 'regionality' (for want of a better word). I'd previously presumed the whole country was beer steins & dirndls (oktoberfest seems to dominate the international view of a night out in germany).     Nice Video and kudos for doing your own sausages! I had Berlin Currywurst multiple times but it did not leave any lasting impression except that i was very affordable (as is food in Berlin). The best Currywurst or CPM (Currywurst-Pommes-Mayo) i ever tasted was in Bochum at a convention center from a greasy food mobile as it was closing for the day. The sausage was homemade as were the sauce and fries. The CPM was better than the much praised Berlin Currywurst in my opinion. The Sausage was grilled on coal and not fried. I suspect that the surrounding setting plays a big role in the taste though. I had my CPM at around midnight after an exhausting day at the convention... maybe i was just really hungry. CPM is a typical Ruhrpott after-midnight snack in the city. It hits the spot where you really need something to top your beer off with ;-). When i get my hot Currywurst in a cold night and feel the warmth spreading as i eat is really nostalgic for me.

    I know I didn’t put as much time in the recipe as you but I bought beer Brauts from Aldi’s grocery store. Made in Germany, broiled and fried them. Them made a sauce with curry. They tasted amazing. Thank you.

    I miss currywurst so so much, you have no idea I cant travel to visit family in europe and eat currywurst anymore and its been so sad living without currywurst

    I'm Danish, and I really love currywurst. Homemade or the real deal in Berlin. It's always good. Has to be real german bratwurst though, I think. Currywurst is so underrated and unfortunately Danish people look down on it.

    14 years I was stationed in Germany. The one thing I miss most is Curry wurst. You can't really find a good Broetchen here so Iong for both, the perfect Curry sauce, a great Wurst, and the broetchen. The first thing I eat each time I go back to Germany is Curry Wurst. This recipe may save me. I must try it. Thank you
