I like that Ben browns his eggs (lets them get brown I mean), because in a traditional French omelette you don't let it get any color. I had a dream the other night after watching sorted before bed that I took part in an ultimate battle. We got to choose from a range of pre-packaged desserts and we had to try to level them up whilst still using the original dessert. I got an ice cream sandwich with oreo ice cream. I added coffee to the ice cream, which was a good idea. Next, I fried up some mini chorizo and deglazed the pan with red wine, then added loads of sugar to make a syrupy sauce, and added it all on top of the ice cream sandwich. I dont know what I was thinking. I woke up before voting commenced, but I'm pretty sure I still would've beaten Barry.

We make Indian-style omelets which are a bit different. We lightly whisk the eggs in a bowl, and add salt, pepper, onions, green chili, tomato, optional garlic right into the bowl with the eggs and mix it all together so all the flavors are incorporated, rather than separate. Then we fry it on the pan, keeping it fairly thin and crispy (not like a frittata), and flip the whole thing over to fry on the other side. Serve it with buttered, toasted bread, heated on the same pan after the omelet is done - my absolute favorite way to have an omelet! :)

We bought and raised 6 hens thinking we'd have enough eggs for the family (of 5) every morning. This was an enormous mistake. We didn't account for each hen laying 3-5 eggs every day, ranging from large to holy-sh**-how-did-that-chicken-last-the-night sizes. We were bringing buckets of eggs to church every week, trying to get rid of them. We were eating eggs for breakfast, lunch, and dinner and still had too many. I never hated egg omelets or boiled eggs so much in my life. Thinking back though, I do miss raising the chicks. It was one of my more favorite chores as a teen.

So this is an old French myth. Ramsey is classically french trained and not immune to mistakes. My favorite example is when he went nuts over a grilled salad on an episode of kitchen nightmares. A dish that isnt too far fetched anymore. Eggs dont break down from salt. Not in a few seconds. So on this hes wrong.

Because they cook really fast, we stir fry the chopped shrimp in olive oil with thinly sliced chilli then add the egg mixture. Sometimes we add chilli oil with dried shrimp into the egg mixture first to spice it up. Really really delicious with rice. It’s more of a side dish, but it adds one to the table.
