Very similar to what we call afia efere. We don't use onions. Traditionally we burn a bit of the uyayak (aidan). We cook it with goat meat or chicken and always serve with pounded yam

Jam head is not used to cook nsala soup due to loups [mkpulu]. Onion will make the yams not to thicken the soup. And that's wrong.

@@meganokoye uziza is not bitter, it's feels hot in the mouth like pepper; so use very very small quantity. And use very small quantity of utazi. The magic there is, utazi reduces it large quantities of bitterness when added in soup, red oil or sorces.

@meganokoye6878 Here, when a woman gives birth, nsala is one of the omugwu soup. It's better eaten without swallow. She just use spoon to eat. With more uziza, no red pepper, and more utazi. Yet, it won't be bitter. There is another one called Saint-leaf soces ; that's the first thing she will eat after giving birth.

In these areas I mentioned, ofensala is cooked using fresh fish ,dry fish goat meat or intestines of cow or goat. You can also use chicken. No Maggie. You can add little 'okpei' uzuza, cray fish pepper,pounded yam as thickener. Oil is optional. The fish or the meat you use plus crayfish & uzuza will give the soup all the sweetness or flavor you require. That is traditional ofe nsala. In some cases you use small bitter leaf instead of Uzuza.

One nsala with stockfish,onion s and seasoning?that's off the mark.The originators of ofensala (The riverine areas of Anamosa East and west ,Ogbaru, Oguta etc) will never use onions and stock fish for ofensala in this way.
