How to Make Nikiri Jyoyu Soy Sauce

Chef Pete Ho teaches us his way of making a delicious blended soy sauce called Nikiri Jyoyu. In the olden days, Traditional Sushi Masters brush this type of Soy sauce on their sushi creations and personally hand it to customers. Nikiri Jyoyu is quick, easy to prepare, and just as easy to store, and becomes more delicious with time.

    Amazing content! I have been searching for nikiri jyoju soy sauce recipe for a year and most info out there only tells you to mix Kikkoman soy sauce with bonito, kombu, and mirin. This one clearly is of much higher quality and great instruction too. Keep up the great work!

    I just realized shoyu, mirin, and sake is the Japanese trinity and katsuobushi is the pope. Ramen tare, teriyaki, and this jyoyu are literally the same ingredients composed in differing volumes. No wonder they taste good - thx for sharing!

    Those are the key Ingredients in Japanese cooking. Then it’s the quality of each product and the ratio of each for all the various different types of sauces, soups, applications etc. ☺️

    Great stuff! Also I thought there will be other Japanese sauce. Just like ponzu(that one, futon your fridge) and other tsukuri ones.
