I think that's because you heated up the milk a bit to much....same thing happened to me

I live in Boston, and I just found out that the Mozzarella available in stores is made from rennet, which comes from the stomach of cattle. As a vegetarian, this recipe is a life saver. I love mozzarella cheese and can now make stuff using it. Thank you so much!

Did it melt on pizza? Some others are grinding paneer with flour and calling it mozzarella. Ridiculous
