As much as I loved my grandmother, for some reason the time she made mint jelly some 30+ years ago is the one thing that always stands out in my brain. Never tasted it, no idea how it was...I just remember my mother and aunts not wanting it as she didn't strain it and left all of the stems and leaves in the jelly. This was one of the few times I remember her getting angry and no one wanted it and she was sitting alone at the table with me and a spoon in my Aunt's kitchen eating jelly out of the jar while grumbling that she didn't see anything wrong with it. I guess I should have tried some to make her feel better, but at 6 years old the concept of anything other than grape jelly at that point of my life was unacceptable. Anyways, about to get a garden started, and was planning on planning some herbs. May need to give this one a whirl...and remember to strain it :)

So simple!!! I gave it a go and it tastes amazing! Next batch I make will have about twice as much mint simply because I'm one of those people who goes crazy for a strong mint flavour!

I had a lovely lemon balm mint plant growing crazy big and wanted to find a way to preserve its sweet fragrant goodness. I found your video which inspired my lemon balm jelly. I didn't have any apples, so ended up substituting pectin to help it set. My husband said it tastes like honey, but much better. I did not add vinegar nor food coloring and added a pat of butter which help eliminate the foam. Hope that doesn't create a problem later. I want to try yours when I have all your ingredients on hand. Thank you so much for sharing.

I made this recipe. I was surprised for the use of vinegar. I have to say, it tastes great. I used more mint than this recipe asked for. However, the end result, although very good, did not taste like mint jelly to me. It tastes more like a tangy apple. I used this recipe only because I could not find pectin in time for my fresh mint. I will find another recipe for mint jelly , but I'll buy pectin next time I stead of using apples. It is a easy recipe and worth making.

I enjoyed watching this video but you totally mis-counted the ingredients; what about the vinegar AND water you put in the recipe??? Not just apples, mint and sugar. But I will say your recipe looked more authentic then some of the other videos I've watched and I definitely want to try it so thank you

Would you use the mash for anything like muffins etc. or is it too full of parts that can't be used?

What do you think of substituting maple syrup for the sugar?

Sugar has preservative qualities and a fairly neutral taste. If you had a crack at using maple syrup instead of sugar I'd like to know of the outcome. You know, swapping a known poisen for a super food and all that.

So it doesn't matter if you use vinegar instead of lemon juice ?

If you're planning to can your jelly, it's best to use vinegar so that you have the correct level of acidity in the jars. It's fine to use lemon juice if you plan to use the jelly right away and store it in the fridge. Enjoy!

Head space should always be 1/4 inch not these random head-spaces you have. Had you pressed out some of the pulp you would have gotten the 4 jars filled. All that work and your not willing to press out some of that extra liquid without over pressing and getting cloudy pulp SO LAZY!

I used a half summer growth of my mint and organic apples and it was a total waste. This tastes terrible and did not jell. the vinegar taste is awful.

LMAO you call the foam scum, if your going to make videos at least learn the correct words. Foam is just bubbles not scum, SMH 1/4 t of butter at the end of boiling will reduce the FOAM to almost 0.
