How to make milk soup (classic soviet era recipe)
is sweet, is salty, is good
ingredients:
250ml uncooked pasta
500ml water
500ml milk
1tsp salt
2tbsp butter
2tbsp sugar
instructions:
set 500ml water to boil
add 1tsp salt into the water
when water boiling, add pasta
boil until pasta almost ready
(pour away pasta water if you want soup less salty. I do not)
pour 500ml milk to pasta
mix in 2tbsp sugar and 2tbsp butter
lower temperature to low and let simmer for few minutes until pasta ready
serve hot with side of buterbrod

I'm from Eastern Europe, but from somewhere that wasn't in the USSR. I had a babysitter from Georgia when I was a kid who would make this for us. At first, I thought she was crazy... then I got addicted, and now everyone else thinks I'm crazy. I sometimes add cinnamon or cheese to it, depending on my mood!

Yep. Either drain the water or boil the macaroni in milk. Extending the milk with water makes it real depression poverty food so i wouldn't do it unless i had to. Those days are over

When I was a little boy in early post soviet 90's in a former USSR country, mama would often make this during winter times especially. I would always like to sneak in some extra sugar into my plate, mama said it would damage my teeth, but she would let me sneak in an extra spoon anyways.

I'm an American, and I made this with store bought pasta from a box (rotoni noodles I think), brown sugar, and a little bit of butter. And Holy Blin it was good! I can't believe how good it was actually, I was truly inspired to make this. I'm definitely going to make it again. Thanks again for another wonderful recipe Boris, back at it again with the amazing content!
Wait, I just saw the thumbnail, my mama who was born in Kazakhstan during the 70s used to make this all the time when I was a kid, this was my favorite but I never managed to get the recipe right. Thank you Boris!!

Could anyone advise me? I initially thought this was a joke, but obviously not. In the matter of cooking this, simple enough. Salty pasta water with a bite sized pasta (or rice, I see how that works) milk and sugar. What about adding a bit of butter and maybe a parsley or other light herb? Black pepper? As an American born in the late 60’s, I grew up with the stories of Soviet shortages, so it seems understandable to my point of view that it is a limited recipe.

@andrewsmith9174 we mostly added sweet stuff, like fruit (if available), or even juice, or condensed milk. You can also add butter, rasins, cinnamon, or vanilla sugar on top

Nope... expensive and bad... switches wear off to fast but if yu have enogh money you can replace it every 6 months for fastest response times in video games... I stuck with rubber keyboard its cheap and if you trow Pepsi around it you wash itt dry it and works nicely... have fun putting all the keys together... 🔑

I had a razer mechanical keyboard last me about 4 years before the keycaps started to wear off and I literally used it for work and gaming while I was doing Remote I.T. what sort of abuse did you inflict upon that poor keyboard to wear it down faster than 14 hours a day of alternating between typing out tickets/documentation and gaming?

That is a actual dish, by the way. Very tasty one, loved it as a kid. He just used the wrong pasta, you must use very very small and thin noodles, its called "milk noodle soup".

Boiling macaroni in milk is actually a great method for making easy mac & cheese! This thickens up the milk and cooks the pasta in one step, so all you need to do is add the cheese!

Used to eat this pretty often in the nineties though we call it macaroni gruel around here and we got rid of the water and used only milk. A bit less sugar, a tablespoon of salt (since the boiling water is gone) and it can never have too much butter

I remember milk soup differently my aunt used to make a batter with flour sugar and egg yolks but a very runny batter that leaves a thick layer on the spoon but still flows off the spoon then boil the milk and when its on a low rolling boil drip the batter into the milk it tastes very simple yet complex and sweet
i spent the majority of my childhood in hospitals. the milk soup they served us was overcooked macaroni, no salt. Partially drained before they poured cold milk over it. No sugar, no salt.

In france we make "lost bread" by dumping the hardened bread in sweetened milk with eggs, then frying it, but I'm sure that if you tossed the bread in your soup it would be close enough. :)

We had a similar receipe in Germany, taken over from soviet time. We add pickled plums into it.

In Bulgaria we use bread instead of macaroni, it's called "попара". We also have another version of it with tea, white cheese, sugar, and butter. I remember how grandma would use fallen fruits from her garden to make fresh tea every morning so I can have попара ❤
This is different from the milk soup that I grew up with! I have to try making it; it’s easy, it’s budget friendly, it looks very tasty and comforting… it’s perfection. Thank you Boris for sharing this recipe!
