Judging by the process, he produced "cheddar cheese". Even if the process of cheddaring is technically done by stacking multiple loafs of cheese on top of each other - what he basically simulated that with the weight press - All the other processes are basically the same: adding chloride and rinnet, curding the milk, setting and draining to add fresh water, cooking the curd throughout the whole process on low heat. Though from what I remember, mass-produced cheddar is not being drained and re-watered like in the video, they just add a whole bunch more water instead to reduce acidity.

Interesting fact: In Russia there was such a thing as a “cheese dealer” as cheese from foreign county’s were illegal and punishable with prison time under the law

God I miss Roquefort. My dealer didn't have it today,got some hard goat cheese instead.
