想請問,油炸後的油會重用嗎❓ 問過後得到兩個回答,一人說會重用,另一人認為高溫油炸後油已變質,不會再用。 兩人做法完全相反,有點不知所措😓

油變質的快慢受多項因素影響 例如油炸食物的種類和分量及油炸溫度 因此難以只按固定時間或油炸次數建議更換炸油 炸油如有異常顏色或氣味如油膉味、 加熱溫度攝氏150-180度開始冒煙或出現不易消散的奶白色泡沫 便應更換了 油炸時若有細小的食物碎屑 容易炭化並使油加快變質 應經常從油中將殘渣撈起
