    Thats the best juicy and seasoned turkey I ever seen Mr Mike, I've had turkey but kind of dry and not much flavor, Ill have to place some gravy on top of the turkey to eat it lol. Have a great one.

    Looks delicious, Mike. I've always avoided the bird because it gets so darn dry so quickly. I've never tried this method though and it looks like a winner. It looked super juicy! Happy Thanksgiving to you and your family!

    Would you recommend anything different for an offset in terms of cook time or the smoke? For example, would I still want to aim for 30m of "cold" smoke then crank it?

    Not necessary. Just fire it up and run it 275-325 and let it rock till you hit those temps!

    Never. Only the leg ends to prevent burning if necessary. Foil will ruin the good crispy skin.
