    @@MarysNest it doesn't have the taste of apple cider vinegar from the store but i give it a try and drink it every morning for 3 days and red spot start appearing on my hands so indecided to throw it away. your video is very usefull. i will try some other.

    Question? can you just use the store bought apple cider with mother and use the mother to create your own Apple cider vinegar adding apples juice and let it ferment like we would for say Kefir? awaiting your reply ladies & thank you. So glad to have found you.

    Larry - I don’t make it. I purchase Bragg’s organic ACV, unpasteurized (with the mother). While I’m fascinated by those with the know-how and patience to make their own, I let Bragg’s do the hard work for me. 😉

    Tope D - I mixed approx a tablespoon into a glass of apple juice/cider 2 - 3 times a day. It also very, very effectively kills hunger. When I say it reset my digestive system, I mean that I had been on prescription medication for 10+ years due to chronic GERD that had been plaguing me for 15+ years but after I stopped taking the ACV every single day, I quickly realized that I no longer had ANY acid reflux. It’s been 3 years and I’m still doing just fine... but I keep a bottle of ACV in the kitchen and occasionally drink some, maybe once a week or so just for upkeep. Also, ACV lowers the body’s overall acidity. *Edit - I used it almost everyday for about 9 months, but have no idea how long I should’ve or could’ve taken it before I no longer needed to, as I only stopped after I ran out of it while recovering from spinal fusion surgery.

    This came out way better than I expected. The vinegar actually tastes like apples! The apple cider vinegar I had from the grocery store doesn't taste like apples at all! I am so pleased with this, and I'll never buy apple cider vinegar again!

    Just decanted my apple scrap vinegar and couldn't be more pleased with the results. Thank you so much for teaching this. The vinegar is tastier than store bought but has the same sharp tang. I love it!

While it is true that regular chlorine will dissipate overnight, the new chloramine that cities put in our drinking water now does not. If you want to use clean water without these chemicals you have a couple choices. Buy distilled water, boil your water for 15 minutes to get rid of it or buy a Zero water filter pitcher to filter it out. I have bottles of tap water for storage that have been sitting out for months and the chloramine is still in the water so be careful and do your research.

    We use so much ACV that it was wonderful to come across this great video some months ago! Thank you for such detailed instructions! I now make it regularly and it always turns out well. We don't have our own apple trees, and organic apples are pretty expensive here in the UK, however recently a resident in our village has been putting out buckets of (organic) windfall cooking apples from her trees for anyone to help themselves to for free! There don't seem to be many other takers, so I am filling my freezer with them, all cut up and deseeded, so I can continue to make ACV in the months to come! I find that when apples have been frozen the whole process of fermentation and achieving the right pH is speeded up for some reason - rather than taking 4 weeks for the first fermentation, it is taking just 2 right now!

    I just started my first batch of apple cider vinegar thanks to you! I'm so excited! I had two apples past their prime and added a half another one. I didn't have a 1/2 gallon canning jar, but used a quart canning jar and halved the amount of sugar. I let you know how it turns out. :-)

    Hi Mary. Hope your feeling better! I posted several weeks ago about my apple cider vinegar not coming out. In case it might help others out, if the same thing happens to them, I decided to let you know what I found out. In my previous batches ( I started 2 a month apart from each other. Neither of them turned to vinegar. I did as you suggested and started over. First let me encourage others to get the ph strips. They are necessary! My opinion of course. The apples I used in those 2 batches were not organic and had a coating of wax on them. After watching other recepies, one of them mentioned that if they were store bought apples and have wax coating on them to put them in boiling water for 10 seconds before proceeding. I did it and it worked, I am happy to say. I noticed stirring my batch this time, I smelled that pungent vinegar oder and the Mother was forming on top just like you said it would. As it turns out, my ph strips were delivered today from Amazon and the level ph I am at is 3.0, yea! I started this batch on 6/24. Unfortunately I live on an island and we can't go to the farm and pick up fresh apples or grow them. I did pick up Organic apples that I found at one store so I will be making another batch, but have to make sure there is no wax on them. Thanks again Mary! I was very encouraged when my batch was doing what you said it would. I love your channel and watch you frequently. Thank you so much for all the knowledge I am gaining from you!

    Nice tips. Did you cut your apples up? Apple Wax is on the top layer like another layer of skin. If you cut the apples up, there should have been penetration into the actual apple parts. It sounds like you didn't cut it up, thus it wasn't able to penetrate the wax?

    There are many KZread cooks who use ac for making prickles. When I buy store bought pickles, I always add ac because I think it makes them taste better.

    Just a note to mention that many, if not most, commercial vinegars are not safe for canning and pickling anymore, either. Companies are diluting their vinegar to 5%, when it used to be 10%. You need 10% to be safe for pickling. So be sure to check the ingredient label carefully to be sure it says it's 10% if you're going to use it for pickling or canning.

    Hi Mary, I was rewatching, getting ready to make my own ACV. I will use organic, but I thought I would comment. Using both baking soda and vinegar is counter productive. Both are good for killing pathogens that would inhibit the good bacteria from being exclusive in the process. But, Baking soda is a base, (alkaline), while vinegar is an acid. It fizzes because the acid and base are cancelling each other out, (an acid/base reaction creates a salt, basic chemistry). In my mind, what you are wanting to do is use something with solvent properties that will suspend the pesticide, so it can be rinsed away. Important to use a solvent on whole apples. Slices of apples in solvent will suspend the pesticide, but with sliced apples, the pesticide now suspended in water, will be carried into the flesh of the apple. You would have done the same with whole apples, the remnants of which are cut pieces going into your ACV. Just rinse any new whole apples and add to the scraps. The alkaline of baking soda can act as a solvent to carry away the pesticide, but could possibly remain as a residue to inhibit the bacterial reaction from utilizing the sugars, and producing the vinegar. GSE, grapefruit seed extract has similar properties, excellent anti-bacterial, anti-microbial, and anti-fungal, but will inhibit the good bacteria from breaking down the sugars, and creating the desired effect. My recommendation is using just grain source vinegar. Wipe the outside with pure vinegar, and put in water, where the vinegar you used to wipe them, together with any added vinegar, can further suspend the RoundUp, and other endocrine-mimicers, as well as bacterial or fungal contaminants, give it a soak, and wipe the apples as you pull them from the vinegar bath rinsing with tap water, or other, filtered, bottled, or whatever rinse is your practice.

I clicked on the proffered link for the document, and it tells me to add my password. I was never asked to create a password. There is no button to click if I forgot my password.     @@tammybenadventures4839 A bit of vinegar in rinse water was recommended to me by a grocer, and I had conscientious foodies in the hippy days that did that as well, so I would say yes. A quick rinse off of vinegar might not be necessary. Me?, I begin with strict adherence to good practices, and over time, loosening principles one at a time, you can find your niche.

    Hi Mary....just yesterday I made a new batch of ACV in a 5 lt glass bottle. I poured some ACV liquid from my previous ACV which is about 10 months old. still with the apples in and a white Mother which I also placed into the new batch... I often watch your videos and lying in bed with my electric blanket on...you got to the place of stirring the apples daily if not twice a day... You were my Fermentation Conscience which got me out of bed to go and stir my new batch which I had not done as I just finished making a new batch of Sauerkraut. While stiring my ACV which looks good and smells good because of the added ACV to jump start it... I decided to nibble a piece of Cowboy Candy I made with Jalapenos and fresh pineapple...then I decided to have a few teaspoons of my Fire Cider Tonic in Honey....decided against eating a piece of my fermented garlic in honey and also decided not to have some of my latest ferment of Habenero and Pineapple that I made. Tomorrow I must decant my Kefir Milk and maybe make some cream cheese as I have quite a lot of Kefir Milk that I must use. Fermenting is so much fun and also beneficial to my health..     I knew it! I was looking to see when you would mention being from NYC. My mother was from Brooklyn and moved upstate (near Rochester). She lived there for fifty years before passing and never entirely got rid of her accent. Hers was thicker than yours (you must have worked hard to get rid of it). I can hear it when you say words like "always". :-) Great channel.

    Hi Mary, I've just made my first batch of ACV using red delicious apples, some strawberry parts, and dried sorrel(hibiscus) with a shake of cinnamon and turmeric, I had to remove the wax first. I also made my first sauerkraut with Caraway, peppercorns, red pepper flakes and half an apple! Thank you for your inspiration, I hope the shakes of spices won't mess up anything

    I made sauerkrat with cabbage, carrots, radishes, salt, ginger, and watermelon juice. I love it with chicken and rice. Spices don't mess up the fermentation or people wouldn't make kimchi.

    Hello Mary, I'm sooo happy to have found your channel. I had been watching your videos two weeks ago and i already made bone broth twice in the IP following your instructions. It turned out great and less work for me. We used to make the broth in the stove top before we had our IP. And thank you for your explanation about not putting weights on top of the homemade vinegar. I had been making my own apple cider vinegar for cleaning for months now and was planning to buy weights coz the videos i saw before was suggesting to use weights.

    Thanks for visiting and so happy you have found my videos helpful! Yes, ACV is an aerobic fermentation so it needs air. But be sure to stir it everyday to prevent the development of mold in the beginning. You might also see a white film develop on top. If it is not fuzzy, it is not mold - it's kahm yeast which is harmless. Just remove it and continue.     Hi, Mary you and Heidi have inspired me to step out of my plain vinegar recipe, meaning I have scobies coming out of my ears 🤣 I'm sharing this with every vinegar maker I know. I love to read about other things people do and I love to try things to see 'what if I did this'. A man on one video said I wonder if I can dehydrate a scoby and make a popcorn topping? Wow! I have scobies galore! Did some research. Turns out there is scoby powder, scoby jerky (tried that, too, great, but don't chew it to the point of total rehydration or you're chewing scoby again), scoby leather (don't get that wet or it falls apart). I digress; back to the popcorn topping. I dehydrated it on the lowest setting so as to not kill any more good bugs than necessary. Crumbled it up, put it in my blender with 50% sea salt by weight. Just a few pulses later I had a great popcorn salt, that's actually good for me and has a great taste! I don't have to worry about wasting scobys any more 😁

    I use ACV mixed with water to relieve heartburn, reflux and even hiatus hernia pains! It works everytime. Thank you Mary you have inspired me i now have 4 jars on the go in various stages. I have not bought organic ACV for over a year now! I do not throw away the apple remains after sieving the vinegar i keep half put it back in the jar. I also tried putting some of the apple remains in a glass jar and added supermarket apple juice let it sit fot half hour then sieved and drank the most delicious juice!

    Thank you, Mary, for this recipe :) I really appreciate the way you break down the process from beginning to end and explain what happens during the process. This is the type of information that I need. Not everyone is a teacher, though you are a very good one. I did a general search on KZread for this recipe and found others who do not understand how to teach, when I should just come to your channel first and look to see if you have a recipe for what I am looking for. Lesson learned 🙂

    Ah oh Mary! I'm in Washington State and we grow apples here in the Yakima Valley. The BEST in the world!!! Let me know if you want some this year. I'll send you a box. The Fujis are my personal favorite. But I love them all. Except the Red Delicious. They have no flavor as far as I'm concerned.

    I remember when I was about 18, my mom brought home some red delicious apples for my brother & I. I absolutely loved them!! I bought a few about a month ago, & was so very disappointed. Zero flavor. I tried researching to find out what happened to the missing flavor. I never have found a definitive answer, but, I also realized that their skins have become so very thick, too. Good grief. Ive always enjoyed very hard, crisp 🍎 with plenty of flavor. Gala, & fuji. Yum. I'm a Hoosier lady. Just about 2 miles north of the Ohio River & Louisville, KY. I've never been to Washington state, but, lived in the San Francisco Bay area in 1980. I hope you have a beautiful weekend. 🇺🇸

    @@mddell58 I'm a native Washingtonian grew up in the SF Bay Area, then moved to the Olympic Peninsula (not far from Heidi of Rain Country that Mary mentioned) I have a childhood memory of the wonderful smell of golden and red delicious apples my grandmother in WA sent to us in Albany CA when I was 8, that was the 60s and boy were they delicious, I agree D, they aren't the same as those fragrant sweet apples back then. I have about 60 pounds of Honey Crisp apples to process and wanted to find a couple of ACV recipes to try with the skins and cores, Heidi's video lead me to Mary's.. small world, eh?     Wow, what a wealth of knowledge. I started taking over cooking/food preparation duties for my family recently. Making food like steak/broccoli, chicken/asparagus, etc everyday seemed to be expensive, boring. I've been trying to learn how to make stuff like organs, broth, fermented foods, etc and finally looked through your playlists Your KZread channel is legitimate 101 course on being a complete home chef. I really appreciate your willingness to share. I used to feel upset that I learned so little in the art of food preparation growing up, as I was fed primarily prepackaged and frozen junk. Instead I just want to be grateful and begin this food cooking journey. Thank you

    I just used a weight on mine that I started yesterday! I watched another KZread channel that recommended a weight. Ugh!!!! Does this mean my batch will turn out bad?

Many people show the wrong way to make ACV because they get it mixed up with the lactic acid ferments. This is an Acetobacter ferment.     Hello Mary How lovely to wake up to all this amazing information! I'm a late developer, Ive spent most of my adult life working in the travel industry, often really long hours. I never saw past that life until I had a breakdown over a year ago and I now suffer from anxiety. So to help I started gardening and learning to cook, mainly to save money. When I came across your channel I became hooked. Cooking from scratch is enormously pleasurable and creative. I thank you so much for inviting me to your FB page.     The fact that you can perpetuate home made vinegar from the culture (mother) makes me wonder why commercial "Raw Unpasteurized" bottles are shelf stable.

I can occasionally hear your NY accent in this video but you seem to have been bred to be in the country with this video.     @@MarysNest wow! Thank you so much for all of that wonderful information!!! I grew up in the country on the mid Atlantic coast and grew up with the influence of 3 generations of incredible cooks and gardeners. My great grandmother, my grandmother, and my mom. I absolutely love to cook! My current journey is trying my hand at raising chickens for eggs and I am having a blast with them! We decided also to have another garden this year after skipping a year or two so I'm looking forward to preserving some of the harvest we get from it. We are even thinking about building a walk in hoop greenhouse so that we can continue to grow through the winter! I hope to work my way toward being more self sustainable as I get closer to retirement, with the hopes of homesteading after I retire. I am very interested in learning more about some of the links you've shared with me so I will absolutely be watching them! Thank you again so much for the wonderful feedback! I love finding channels where the channel owner is interactive with their audience! I will definitely share your channel and videos. 😋😘❤️

    Mary, I wish you could see one of my apple cider vinegar , it has a wonderful mother, have you made pineapple vinegar yet, out of the cores, it is so good, and so good for you, it's my favorite vinegar, makes great vinaigrette, God Bless, xoxoxo

    zeina alsaleh - Hi Zeina, not sure if she’ll get a chance to reply but basically in making any type of fruit scrub vinegar, you will just fill the jar halfway through with your scraps… Pineapple or otherwise… Add a quarter cup of sugar and then add filtered no-chlorinated water within about 2 inches of the neck of the jar with filtered non-chlorinated water. Stir well. Cover with a coffee filter or some type of cloth and remember to stir the ferment everyday for 30 days. After the first five days add another quarter cup of sugar. And stir well again.Do not weight down the fruit and/or fruit scraps with a weight because this is an aerobic ferment and it needs to breathe. BTW - Do you enjoy making other traditional foods?     If you make in canning jars, you could just put the lids on, shake thoroughly, or turn gently end-over-end, remove the lid and put the cloth or coffee filter back on.

    Hi Mary. I wish I had found your channel a couple of weeks sooner! We just wrapped up apple season in Manitoba. I went on Pinterest and found instructions for making apple scrap vinegar. I didn’t realize that using a fermenting top (mine are just silicone tops with a vent) wasn’t recommended for vinegar. I have strained off the apples now and have covered the jar with a coffee filter. It smells great and looks great. I’m just concerned that I may have ruined it with the silicone tops.
