    My friend, do not let your coffee come to the boil. It will make it bitter. Remove it from your flame as soon as the foam has formed, but before it begins to boil.

    You never let it boil. You try and take it off just before boil so you keep the foamy part on top. Put it on and off the heat near the end to create more foam

    It's better to use a small wooden or plastic spoon to stir the coffee because the pot is very thinly lined with tin to separate from the copper and the metal spoon scratches away at the tin. Also don't bring the coffee to a rolling boil like that. Run it over medium heat and allow fine bubbles to form and slowly begin rising. As it begins rising about half an inch or more you can begin taking it off the heat and pour. Wait 2 or 3 minutes and the sediment will sink in the cup then you can drink it.

    I prefer to let the coffee powder sink in when the water starts to warm up. Then you don't need to whisk it anymore. And: I'd suggest to put the coffee aside before it's boiling that much. So you'll get a nicer and thicker crema. :-)

    Watching from greece. That is burnt coffee, it's not gonna smell or taste good. When the ring forms on the outside, stir until the surface becomes lighter colored and wait. You want to take it out when it rises but before it boils like that. You don't wanna see big bubbles before you take it out. And NEVER stir it in the cup!

    Neither. Its not instant coffee, but you dont strain it either xD the very fine coffee grounds actually sink to the bottom :) so by the time its cooled enough to drink, all the coffee grounds will have formed a sediment on the bottom of the cup and you can safely drink xD but you better be careful as you finishing the coffee so as not accidentally sip on the sediment, its not too great xD

    Ppl used to put egg shells in the coffee pot to strain out the grounds. I think they did this the the US west in the 19th century but I'm guessing it goes back way further and in other countries.

    for the Master Gündogdu Bey & not only him.- 🚧 & why turkish?and not arabic?And if turkish, then greek, cypriot,armenian etc.As long as in the 15th! century the Arabs (and not Ottomans), learn to roast & grind coffee beans.As for his appearance in Constantinople, took place after1517(conquest of Egypt) & the first two coffee shops took place in 1554 (16th! century). As for the name of the coffee comes from Kingdom of Kaffa of Abyssinia.The etymology of Kaffa is thought to be from arabic qahwah meaning "a drink of berries"! 🚧

    😂true. We all make it like this. Serbs usually let the water boil first, and then add coffee, let it rise. Maybe the reason is not to burn it, like everyone is mentioning in the comments.

    Thank you for your video! Respectfully, I should echo previous commenters. No offense, please, but you need to learn and practice it more. 1. With metal spoon and aggressive steering, you scrape the thin tin coating off your cezve. This is a big no. 2. The severe boiling kills the taste, and on the scale from sour to bitter, it makes the taste of the drink very bitter, even impossible to drink. 3. Just for one cup, you should have used smaller size cezve (about 120 ml max). I understand that reading criticism from strangers is difficult. My apologies if you feel this way. I did not mean to offend you. Only positive vibe and good coffee!

    Why are you stirring it on the range. Stir it at the counter.. and you don't have to stir it so much Put it all together and stir it on the counter and then put it on the range and take it off right with it starts to foam but don't let it foam all the way. This is how my Greek yiayia from Greek showed me how to make it.

    I’m Eritrean and we make our coffee in a clay coffee maker kettle, and we take it off the heat when it’s boiled and when it’s about to erupt like a volcano, i don’t get why y’all are tripping about him letting it boil

    Very common in coffee culture to know that boiling is too hot and will turn it bitter. Basic rules of brewing.

    it's not greek coffee (aka turkish). It's totally turkish coffee. Greeks, armenian, arabs etc. addopted this in ottoman turkish era. Considering this coffee greek is like considering cricket as indian/pakistani sport.

    I like it like that stronger taste sometimes :) Have some coffee roasting/grinding store near by, where they grind it on the spot. Sometimes they roast beans a little bit more, and I love when I catch a round like that. It tastes stronger.

    Turkish coffee is an internationally accepted brewing method. It doesn't say anything about origin or where the beans etc come from. Wherever it comes from, it's a nice brewing method to enjoy some coffee ❤
