📝 Ingredients:
• 500g chicken breast fillet or tenders
• 3 tbsp olive oil
• 1 green chili, chopped
• 1 red onion, finely chopped
• 4 garlic cloves, finely minced
• 1/2 green bell pepper, finely chopped
• 1/2 red bell pepper, finely chopped
• 1 cup rice
• 2 cups tomato passata
• 1-2 cups water
• 1 1/2 tsp dried oregano
• 2 tsp cayenne pepper
• 1 1/2 tsp cumin powder
• 1 1/2 tsp smoked paprika (substitute with normal paprika if unavailable)
• 1 cup black beans, drained
• 1 cup corn, drained
• 1 tsp salt
• 1 1/2 cups cheese, shredded
• Fresh tomatoes, diced (for garnish)
• Fresh cilantro/coriander, chopped (for garnish)
• Fresh jalapeño, sliced (for garnish)
• Fresh lime
🍽️ Instructions:
1. Prepare the Chicken:
Cut the 500g chicken breast fillet or tenders into bite-sized pieces. Season the chicken with a pinch of salt and pepper.
2. Sauté the Vegetables:
Heat 3 tbsp olive oil in a large skillet over medium-high heat. Add the chopped green chili, finely chopped red onion, and minced garlic cloves. Sauté for 2-3 minutes until the vegetables are softened and fragrant.
3. Cook the Chicken:
Add the seasoned chicken pieces to the skillet. Cook for 5-7 minutes until the chicken is browned and cooked through.
4. Add the Peppers:
Add the finely chopped green and red bell peppers to the skillet. Sauté for another 3-4 minutes until the peppers are tender.
5. Add Rice and Liquids:
Stir in 1 cup of rice, 2 cups of tomato passata, and 1-2 cups of water.
Mix well to combine all the ingredients.
6. Season and Simmer:
Add 1 1/2 tsp dried oregano, 2 tsp cayenne pepper, 1 1/2 tsp cumin powder, and 1 1/2 tsp smoked paprika to the skillet. Mix everything together and bring to a simmer. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
7. Add Beans and Corn:
Stir in 1 cup of drained black beans and 1 cup of drained corn.
Add 1 tsp salt and mix well to combine.
8. Cheese and Bake:
Preheat your oven to 180°C (350°F). Sprinkle 1 1/2 cups of shredded cheese evenly over the top of the skillet. Transfer the skillet to the oven and bake for 10 minutes, or until the cheese is melted and bubbly.
9. Garnish and Serve:
Remove the skillet from the oven and let it cool for a few minutes.
Garnish with diced fresh tomatoes, chopped fresh cilantro/coriander, sliced fresh jalapeño, and a squeeze of fresh lime juice. Serve hot and enjoy your delicious Spicy Mexican Cheesy Chicken, Beans, and Rice!
