Eskimo Cake
1.5 cups of flour
3/4 cups of sugar
2 TB sp of cocoa powder
1 t. sp of baking powder
And 6 eggs
2 cups of hot milk to moisten the cake
Filling:
1 cup of powdered sugar
100 gr of butter
2 Tb. Sp of corn starch
4 Tb. Sp of sugar
1 cup of heavy whipping cream
2 cups of milk and 2 eggs
Ganache:
5 oz of dark chocolate
5 oz of whipping cream
Directions:
Chocolate cake tier:
Pre heat the oven to 55 min at 355 F.
1. Beat the eggs with sugar until creamy white.
2. While beating the eggs in a separate bowl mix cocoa, flour and baking powder. Transfer the egg mixture to another bowl.
3. Add the dry ingredients to the egg mixture and mix well with you spatula.
4. Line a 10 inch cake pan with a parchment paper and Bake.
Lets make the filling:
1. In a saucepan combine the eggs, the starch and the sugar. Mix them well and add the milk.
2. Place it on the stove and cook it on the low heat until it gets thick.
3. Add room temperature butter to it and cover with a lid and cool it completely.
5. When the cake is ready remove from the stove and remove the parchment paper and place the chocolate cake layer back into the belted pan. Wait
6. Line the sides of the pan with parchment paper
7. Poke holes with wooden skewer and
8. Pour hot milk over it to moisten the cake.
9. Line the bottom and the sides of the pan with foil.
Now lets continue with our filling:
4. Beat the whipping cream until it turns stiff and add the sugar.
5. Once cooled mix the egg mixture with the whipping cream mixture and beat until well combined.
6. Cover the chocolate cake layer with the filling and put in the refrigerator.
Lets make the Ganache:
1. Heat the cream and pour over the chocolate.
2. Let it sit for 10 min without mixing. In 10 min mix it well until the ganache becomes uniform.
3. Pour over the chilled cake . Wait.
4. decorate with fruits and refrigerate for at least 5-6 hrs.
5. Take out the foil and the parchment paper liners from the sides and serve to the table.
