Take your used elderberries put them in a clean jar and add apple cider vinegar. Cover with a piece of cloth (cheese cloth or something similar) Let it sit for 4-6 weeks keep and topping off the vinegar if it evaporates, making sure the berries are covered. You have a homemade elderberry vinegar.

I have been doing syrup for a long time.. Learned Herbalism, it helps :). Now i do it with 1/2 of water decoction, 1/4 honey and 1/4 of alcohol. It has a much longer shelf life and if you don’t like the alcohol taste, you can just add your TBSP to a bit of juice. That method is the one learned in many Herbalism Schools. To a longer shelf life, you go up to 1/3 alcohol portion with a 100% grain alcohol. The idea is not to take too much of this syrup anyway .. And depending what you add in it (with the elderberries) , better having it in the morning. Too much Vit C might keep you awake ! :) You can do the syrup, and while steeping you can add the more fragile herbs like flowers or leaves - they will be in the infusion stage. ( mullein, plantain, thyme ..) depending what kind of syrup you want to have. If you have specific cold-flu symptoms each year, like a lot of damp or not able to cough.. choose the herbs that are ‘expectorant’. You will have a customized syrup ... You can also make one for the beginning of the season - fall and then another one for winter so with more warming herbs if you have tendency to feel cold, and moving through spring with more carminative herbs to help moving the winter toxins out with this Yang season showing up and helping the Liver to do its cleansing process. Cardamom, Fennel, Cumin seeds, Coriander seeds, Cinnamon, Ginger, etc. are great at this time. You want to move the blood. To expel the toxins out :) As per as in fall, you want to use more astringent herbs, to keep the energy in, not to let it out (as too much ginger at that time of year will open the pores and makes you sweat too much ). Loosing to much Jin Ye ( Organic liquid) is not good. Winter, being Kidney’s energy, you want to comfort the body with nice minerals and nourishing herbs .. add them in your syrup. Enjoy the Syrup Seasons ...
