How To Make Easy Nut Free French Macarons

Move over traditional #macarons!
These Easy Nut Free Macarons are absolutely delicious and indulgent, while being allergy free! They are so easy to make, you don't even need a special occasion to enjoy them.
Nut Free French Macarons
Ingredients:
120 grams Egg whites
52 grams Granulated White Sugar
250 grams Icing Sugar
140 grams White Rice Flour
2 grams Cream of tartar
Gel food coloring (optional)
Preheat the oven to 300 F ( 150 C) and prepare baking pans lined with Silpat, Teflon mat or Parchment paper.
Sift the icing sugar and white rice flour. Whisk it thoroughly and set aside.
Add the egg whites and cream of tartar to a mixing bowl and whisk on high, until the egg whites reach soft peaks. Start slowly adding the granulated and sugar and continue whisking until the meringue reaches stiff peaks. At this point, add any optional gel food coloring.
Incorporate the meringue into the dry ingredients, adding it in batches and mixing it with a spatula. Continue mixing until it reaches pipeable consistency.
Transfer the macaron mixture to a piping bag, fitted with a Wilton #12 Tip and pipe all the macarons. Let the macarons sit at room temperature for about 45 minutes to 1 hour. Once the macarons have sufficiently dried out, place one tray at a time, in the 300 F (150 C) preheated oven and bake for 7 minutes. After 7 minutes, turn the tray around and bake for another 6 minutes, but start checking for the doneness at 5 minute mark, by wiggling the macarons. If they still wiggle, bake them for another minute and then test again. Macarons are ready when they do not longer wiggle.
Let them sit on the tray until fully cooled. Match all the cookies by size and pipe with any filling of your choice. Sandwich them together and place them overnight in the fridge. Next day, take them out and leave them at room temperature for 2-3 hours before eating. They will last 5 days in the fridge and 3 months in the freezer.

    The first time I tried this recipe i over mixed it... what I learned is that it actually doesn’t take too long for it to turn runny. The second time I used baking powder instead of cream of tartar.. it worked out perfect they rose very well! Thank you for this alternative 🤍

    thank you for this i am gonna make these! I miss macarons I developed a tree nut allergy late in life and they were one of my favorite cookies and finding them nut free in bakeries at least for me as been exceptionally hard.

Allergies do suck especially in baking but it is what sparked my interest in doing it for myself cause I had to be careful in bakeries and such so it’s also a blessing

    I followed the recipe only using whole wheat flour instead-it turned out great! I noticed a lot of people had issues with the “feet” or cracks in the macarons so I made sure to leave it out for over an hour. This was my first time ever making macarons and your tutorial helped so much!

    Is whole wheat flour the same as "all purpose flour"? And is the ratio 1:1? That is, you used the same weight for the whole wheat flour as the same weight she used for rice flour in the video? And how was the texture? Light or dense? And was baking time the same? (Thanks so much in advance)

    @@wiggleyum4347 I think you would have loved it! It was a desert tea. We had traditional Whelsh cakes, with a choice of lemon curd, strawberry preserves, or Devonshire cream, the macaroons with vanilla buttercream, and Oreo bon bons (the bride loves Oreo). Served with an unsweetened white tea or water. We had Rosé for the toast, and I loved being able to pull out my great grandma's crystal wear and silver. Sometimes it's just fun to get dressed up and have tea with family and friends! 😁☕😁

    It will be amazing if you can make a video with almond flour and also vegan macarons. I tried once but I wasn't so happy with the result. And also why my macarrons are shiny and not matte like yours? Yours are absolutly amazing!!

    Was really excited to try these today. Unfortunately things didn’t turn out as hoped. They looked beautiful but were hollow and didn’t feel like they had the right texture. I’ll have to try again another day.

    Awww that's too bad :-( You're right about the texture, it is different from almond macarons, because the rice flour has no fat or oil in it. Hopefully, you'll be happier with them next time and I'll try to make more nut free macaron videos, using different ingredients :-)

    Hi! Thanks for this recipe! I’m planning on making these for my mom for Mother’s Day and needed a nut-free version because of allergies in the house. Question: do the egg whites need to “age”? I’ve read that egg whites should be separated and put in the fridge for up to 5 days in advance. Is this necessary for this recipe?

    Hi :-) That's a great idea for Mother's Day dessert! You don't need to age the egg whites for these. That was usually done to evaporate as much as air and moisture possible. It is never a bad idea, but it's not really necessary. Just make sure that you let these macarons rest after piping, for at least 45 minutes. If it's a humid day, I usually dry these for 1 hour before baking. It's not the same drying time as regular macarons, but these need a bit more. I hope this will help. Good luck and have fun :-)

    Hi! Thanks for the handy video. We just made our first batch today! It looks great, I must say, we should have macronaged it a tidy bit more to have that satin ribbon like consistency. And will have to get that pipe nozzle size next time to make piping a lot easier. The rice flour seems to make the texture a bit gritty and definitely noticeable. Is that your experience as well? Any advice?

    Hi Charissa, You are absolutely right. The rice flour does give them that gritty consistency. It does dissipate quite a bit after they age with fillings, though. However, it never completely goes away. I have never personally tried it, but some people mentioned in the comments that they had great success, using AP flour. Maybe that would solve that issue for you. So sorry I couldn't be more of a help :-(

    WoW, you made that look so easy and doable. I think I I will be trying this out in the next few days... since I do have almond flour (and I don’t have white rice flower), would I put in the same quantity?     Thank you Natalie, for such kind words :-) This recipe would not work with almond flour, but I will be making a recipe for regular macarons soon. And for vegan macarons, you would nee to replace the eggwhites with aquafaba. I can make a vegan recipe macaron video if you'd like.

    Yes, you can omit it completely or replace with the same amount of vinegar or lemon juice. It just helps stabilize the egg whites better, but it's not absolutely neccessary :-)

    Hi :-) I only let these mature after the filling. They still have more of a crunchy and less chewy texture than almond ones, but they do "soften" more after they are filled.

    The flour I used in the video is regular white rice flour. My preferred is white rice flour, but regular is just fine :-)

    Yes, they are sweet and very yummy. The only difference I would say is that they are more crispy than regular macarons, since there is no fat from almonds to give them the chewiness. I hope that answers your question :-)

    Hi Rafla, Are you referring to cornstarch? If you truly mean corn flour then no, it cannot be interchanged. But, cornstarch MIGHT work. I would say, try it :-)

    Great question! Usually for macarons, oven needs to be started once you have all of the ingredients set out and you start making them. This is to make sure your temperature is even and is not coming to correct heat while the macarons are drying. So, first start the oven and then start making them. For the type of oven, I have a conventional oven and the heat rises from the bottom. No matter what oven you use, make sure that you place the tray on the middle rack and bake 1 tray at a time.     I only ever made these with white rice, sweet white rice and brown rice flour. The brown rice flour makes them very liquid fast and they also bake a lot faster with it, but it still works! Unfortunately, I never used specifically Thai white flour, but I would definitely give it a try if I had some on hand 😀 So, I'd say, give it a try!

    i tried at 145c temperature for 17 minutes, it became crispy :) reduce to 13 minutes, it became chewey......any suggestions please

    Hey Sheeka, I've never made this recipe without eggs, but I always use aquafaba as egg replacement in my vegan macarons. So, I'd try aquafaba and see what happens :-)

    If you wish to store them longer, just freeze them in a sealed bag or container and you can keep them fresh for 3 months. Take them out of the freezer few hours before serving and you'll be good to go :-)

    Hi Kawther, I have never tried this recipe with regular wheat flour, but someone in the comments mentioned that they have and their macarons turned out great :-) If you end up making them with rice flour, they are more delicate than regular macaron in texture and less chewy. So, I'd give them a try with AP flour :-)

    Yes, they do have different texture and flavour than almond ones, because there is no fat in rice flour like there is in almond, so they don't have same chewiness. But, once combined with fillings and buttercream or ganache, they are perfect!

    @@guddishashu5969 I never tried making these with nuts or peanuts, but if you are interested in using peanuts, I would suggest this recipe instead and just replace the almond flour with peanut flour.     I've used sweet white rice, white rice and brown rice flour for this recipe. They all create different texture and result, so I honestly don't know how they would turn out with glutinous rice flour. But, you could try with just half a batch and see if it works for you :-)

    Unfortunately, I have never made these using cup and spoon measurements since they don't all measure ingredients the same and you have to be extremely precise with macarons. That's why you have to use a scale for these.

    Hi :-) that's a great question! So, with any type of macarons, almond or nut free, you have to pipe all of the batter at once and bake. Unfortunately, you cannot preserve the batter for later, it will completely deflate and be unusable. If you only have 1 tray, you would also pipe everything on separate parchment papers and then carefully transfer them to the tray when you take it out and then bake.     I'm so sorry to hear that :-( macarons usually don't develop the feet when the batter is still to wet, after they've been piped. So, it depends where you live, how humid it was on that day, whether your macarons dried out enough or not before going into the oven. They usually have to stay 45 minutes to 1 hour to dry out before baking to develop the skin. I hope this helps

    can you use this exact recipe to make different shaped macarons? Or do you need to add more of a dry ingredient? Wanting to make shell-shaped ones for my daughter's birthday and found recipes that will work, but they contain nuts. In the other videos, the mixture was in a stiffer consistency.

    Great question Johanna 😀 These macarons actually keep their shape even better than regular ones. I've piped them into teddy bears and cat shapes before and they hold up perfectly. No need to change up the ingredients! Have fun baking :-)

    Hi Maricar, Yes, you can use brown rice flour :-) Just note that they will turn "liquid-y" a little faster, so you won't need to "macaronage" as long. If you overmix them, they will spread too much when piped. They will also have higher feet with slightly different mouthfeel. Gutinous rice flour should actually work the best since I always got the best results with sweet white rice flour. Have fun :-)

    There is white rice flour, sweet rice flour, brown rice flour. And yes, all made of differnt types of rice. All of them produce different results. So, for these macarons just look for white rice flour, not brown and you should be good. The brown flour makes them more liquid, and you need to bake them for a shorter period of time.

    This batch makes about 70 shells, so 35 sandwiched cookies. That is if they are 4 cm in size when piped.

    Hi :-) I never bake them 2 trays at a time, because ovens don't heat evenly throughout and macarons are very delicate. Your top tray might be ok, but bottom might burn or undercook, or vice versa. But, you can always try and see if it works :-)

    Wiggle Yum they baked with hollow shells and they spread too much for me, i think because i was unsure if the egg whites are stiff peaks and they became clumpy and not glossy. i also overmixed it and took alot of time trying to pipe them, so the batter became too loose and they spread apart. they came out sweet and delicious though 😋

    Awww that's too bad :-( Sometimes, macarons can be finicky and need lot of trials and errors. But, you were able to recognize potential issues, so hopefully, if you make them again, they'll turn out better :-)

    Hi, It does technically work, but the texture is somewhat different and it does macaronage a lot faster, so if you mix for too long they turn very liquid. I hope that helps :-)

    I would then rotate the macarons at 5 minute mark and then check them again after 3 minutes by wiggling to see if they are done. If not, check again after 1-2 minutes, until they don't wiggle any more. Good luck :-)

    No, they can be made in humid climate, just like regular macarons. If you can make them on a dry day that's the best. Anyday that's less than 50% humidity is ideal. If not, just let them sit longer, until they dry out, and form a shell, sometimes up to an hour or so.

    hello! these macarons look so delicious :,) however, the flour I have on hand is sweet rice flour. is there a difference between sweet rice flour and sweet white rice flour? thanks in advance! ❤️

    That's a great question! They ARE made from different rice, so are technically different flours producing different textures. The sweet white rice flour is made from glutinous or sticky rice, and sweet rice is made from regular white rice. I've only made these macarons with white rice, sweet white rice and brown rice flour and textures are quite different! Brown rice, for examples make quite runny "dough" with thinner shells and different mouthfeel. I would personally try it for the fun of experimenting and if it's a complete fail, you'll know. Side note, these can also be made with regular All Purpose Flour :-) Good luck and have fun with it :-)

    Ask away, no problem :-) Unfortunately, measuring cups are never a good idea for macarons :-( They are never accurate enough to properly weigh the ingredients and macarons are already finicky to make. You will definitely need at least a basic scale for this. I'm sorry 😞

    I've never used AP flour with this recipe, but someone in the comments mentioned that they used whole wheat flour and were successful :-) So, I'd give it a try!

    I tried these and they were really crunchy and the macaron seperated from the feet. Do you know what happened?

    Hi, Yes, they are crunchier than regular ones, since there is no fat like there is in almond flour. They become softer once they mature with the filling, for about a day. For the feet, that usually happens if the oven runs higher than it says, or if the meringue was whipped for a while so a lot of moisture was lost. That can happen really fast! Even if you let them rest for the recommended time, but it was a dry day, the feet can get really tall and separate. They really are a temperamental cookie :-( I hope you have better success with your next batch.

    Thank you for asking, and I'm sorry to hear that :-( I have never had them crack, but that could be due to the fact that I live in a very dry climate. So, it takes me about 45 minutes to 1 hour for them to dry out before I put them in the oven to bake. If you live in a more humid place, or it was a more humid day, they most likely just needed to dry out longer. Macarons crack on top when they are not dried out enough and didn't form a skin. I hope you give them another try and that they work out for you

    I'm so soryy to hear that :-( When macarons crack and have no feet it's usually because they didn't dry out enough and didn't form the skin. These macarons sometimes they take really long time to dry, like a full hour or so. Another reason could also be the oven. A lot of ovens vary and don't really show correct temperature, so it's a good idea to use a thermometer to be sure that the temperature is exactly 300 F. I hope this helps when you try them next time.

    Zina, I can't reply on your other question directly for some reason, but if you are asking if you could use powdered sugar, then Yes. Powdered and Icing sugar are the same thing. And if you are asking about the actual flour, Julia mentioned in the comments that she made them with whole wheat flour instead of white rice flour, and they worked for her. The most important step is to dry them for 1 hour or more even if you live in a humid climate. I hope this answers your question.

    @@user-df2jy2ln2l ah I see. You definitely have to whip the eggwhites to get the french meringue and then incorporate it all together. It's done that way so that you dry out the eggwhites, to release as much moisture as you can. So, for sure, have to follow the process.

    Hi Roger, I'm so sorry, I don't quite understand. You are saying that when you mixed the whipped eggwhites with flour mixture, it wouldn't come together and become homogenized after mixing it with spatula? It just crumbled and stayed like that?
