Many many years ago (1972-1973) -- in Sierra Bayamón, we had a next door neighbor that made these using the large size chunks of coconut. He used a small ice cream scoop to portion out each serving and gave them to us on wax paper. He had returned from working 30 years in the Detroit car factory and spoke some English. Every morning he would make the best smelling coffee (Yaucono?) and sit on his porch in the shade to read his Bible and was the best neighbor we have ever had. Don Graciliano was so kind to everyone. Thank you for the comment. The lime rind gives a hint of flavor but it’s not necessary. It will still taste really good. ❤️

Can I use the water from inside the coco or it has to be regular water? Gracias!

Great question, I use regular water but I don’t see why not. If you use the coconut water let me know how it comes out. Thank you.

Do you remove the rind when the moisture is removed?

hello, yes, the peel and cinnamon stick should be removed once the liquid is mostly absorbed. ❤️

no need to peel it my friend

i don't use water i use coconut milk or coconut water
