How to Make Doubles and Coconut Chutney | Trinidad &Tobago 🇹🇹

Doubles Bara (makes about 24 individual bara) Tweaked Recipe
Ingredients:
3 cups all purpose flour
2 tsp yeast
1 tsp baking powder
1/2 tsp salt
1 tsp sugar
1/4 tsp baking soda (optional)
small pinch tumeric powder
2 tbsp oil
Method:
Combine all ingredients and form a soft dough with enough lukewarm water, add 1 tbsp oil on top of dough, cover and allow to rest for at least 1 hour or until doubled in size.
After dough rises, oil hands and table top, pinch off small pieces and flatten on table with fingers to form a thin circle. Fry immediately in very hot oil for 1 second on each side and put it immediately in a container and cover.
Channa Recipe:
Ingredients:
16 oz pre-boiled channa (chickpeas)
2 tbsp oil
1/4 tsp baking soda
1/2 medium onion
4 cloves garlic
1tbsp curry powder
1 tsp geera powder
salt to taste
1-2 tbsp green seasoning
1/4 cup pureed dhal (split peas)
Method:
1. Heat oil and cook onions and garlic until soft
2. Add curry and geera powders and cook for about 2 mins
3. Add pre-boiled channa and saute for a few mins
4. Add enough water to cover and allow to come to a boil
5. Add salt, baking soda and green seasoning
6. Add pureed dhal
7. Mash some of the channa and allow to cook to desired texture and consistency
Coconut Chutney:
Ingredients:
1 dried coconut
6 cloves garlic
2 sprigs curry leaves
5 shadon beni leaves
1 hot pepper
1 tsp salt
1 tsp water
Method:
1. Roast coconut over open flame
2. Grate roasted coconut finely
3. Add curry leaves, shadon beni, garlic, hot pepper, salt and water to grated coconut and grind with sill and lorha as in video or in a food processor or blender
Sweet Sauce:
Ingredients:
2 green mangoes chopped
1/4 tsp tumeric powder
1/4 tsp salt
3/4 cup brown sugar
1/2 tsp geera powder
4 cloves garlic grated
6 shadon beni leaves blended
Method:
1. Bring a small pot of water to a boil
2. Add chopped mangoes and allow to soften
3. Add tumeric powder, salt, geera powder, grated garlic, shadon beni, brown sugar and allow sauce to thicken

Thank you, all videos are mostly done by me, my wife and my mum...I try my best to do one per week. Its takes alot of time to do each video with a full time job and 3 little kids running around lol..

Trini Life With Vedesh Ok.. good. I am in Malaysia. And was just dreaming of eating a good doubles. Have not had one in 3 years, and in lock down. I made it myself today using your recipe Coconut, cucumber and mango chutney also. I shared with my neighbors. Did not Have enough. They loved it. We do get only in Singapore similar from the Mauritius Restaurant. They also have dhall puri. But flavors not Trini. Thanks for the recipe.

I tried your sauces it is the real thing.i remember my grandmother and mom using the stone and loraha to grind every thing.now is only blender.WHICH DON'T BRING OUT THE REAL FLAVOUR IN CHUTNEY.HOW DO I MAKE THE TAMRIAN SAUCE AND SWEET SAUCE.THANK U.

I would like to get a lorha and sill to buy.. Can anyone point me to where I can get one.? I had one from my mother in law but moving from one residence to another, both got misplaced and since that was in the 90's, obviously if I still can't find it around my house today , it ain't there at all... I appreciate any help.
