    I’d like to come back here and report that I made these doughnuts last night, and hoooo-mygosh!! Literally thee BEST doughnut I’ve ever made at home. & I’ve gotta say, I’ve tried a lot of the “best homemade doughnut” recipes, and they all just left me disappointed. Either the flavor was too off, or the texture was wayyy off, and not at all how a doughnut should be. I should say that I’m pretty skilled with bread making, so I don’t feel like it was any user error for the other recipes. These were SO soft, and so fluffy! I made a homemade pastry cream to fill them with. So phenomenal. Honestly I can’t believe Erin just gave away this amazing recipe! What a generous person!! 😂 Now, a few tips here: The dough IS a pretty wet/sticky dough and that can make people scared to work with it. Do not add any more flour than the recipe calls for, or you’ll end up with tough, dry doughnuts. To make it easier to work with, you can refrigerate for about an hour or two after the initial one hour rise. This will make it much easier to work with. Or just make them the night before and let them rise in the fridge overnight. & As Erin said, don’t flour your work surface too much either. Everyone should seriously try this. I can’t recommend them enough. & I so enjoy watching Erin, she’s so awesome and explains things well!

    aliyah p I believe cake donuts (donuts without yeast) have a higher tendency to be greasy if you don’t keep your oil at the proper temperature. I’ve done it myself! I didn’t find that these were greasy at all! Just make sure to keep your temp above 350! That helps with the greasiness.

    Food52 can u substitute the active dry yeast for instant yeast will it make a huge difference to the donuts???

    I loved my mother dearly but she was the worst cook. She was a WWII bride and married so young that she had not learned how to cook from my grandmother who was a superb Southern cook. One of the few things my mother did once that was delicious was homemade donuts. She wouldn’t make them again because she said it was too messy. I can see now why a young mother of four would say that! I have always been afraid to try but having seen your excellent tutorial, I think I will! Thanks!!

    I'm a dude and I want to be the type of husband that can just make donuts for my wife and kids specially when they crave for it. Just imagining the thought that donuts can bring is already such a wonderful life. I'm a donut and ice cream type of person by the way.     wait! Did i just learn that its the same recipe for filled doughnuts? I love filled donuts and have never made them like this. thought they needed a sturrdy choux dough, so I never make them. Thanks for sharing your family recipe, and thanks for your book The Book On Pies. I share your passion, coming from 3 generations of, i don't know if you'd call them "professional" pie makers, but me grandmother remembers sitting on the flour can while her mother made pies for all the restaraunts close by back in 1915. Then, grandma also made pies for everyone and my mom could hold her own and feed the neighborhood. In a small town in Arizona she and my dad were the only ones getting any handyman work done on a timely basis, and when a neighbor asked the handyman why he did mom and dads before hers, the handy man said, "because Carolyn always has pie!"

    Erin, my husband and I just made these donuts yesterday after watching your video. I LOVE that it doesn't take allll day to make these, and doesn't make too many for just 2 people. OMG!!!!!!!! Best donuts EVER!! THANK YOU from the bottom of our hearts. What is the best way to STORE these delicious donuts without them getting all wet in a container? I have never found a good way to store donuts, they are either dry or wet.

    Thanks for sharing. I own a donut shop and have our own recipe. This recipe beats Krispy Kreme hands down. It is too delicate and you have to eat right away. If we could serve while you wait,I am sure people will climb through the windoe to eat your donus. We sell our donuts cold.

    Just Came Across Your Videos Erin And I Have Watched You Now For Three Hours. I'm Loving The Way You Teach And Explain Your Baking Techiques And Give Your Personal Opinions And Techniques On Why You Choose To Do Things Certain Ways To Make Your Recipes A Success !! My Mother Was A Teacher In Elementary Education And Also She Minored In Home Economics / With A Math And Sciece Degree !! I'm A Great Cook And Know How To Bake. I Took Homemaking In School Every Year From 7th Grade Through 12th grade. I Was Always Considered Each Year One Of The Best Cooks In Class. Also , My Mother And Grandmother Were The Best Teachers . I Lived In The Kitchen With Them And Loved Listening To Their Stories From Their Past To The Present And I Always Questioned Them About How To Make Some Of Their Recipes , Which Were Sometimes Given To Me. A Lot Of Recipes Were Not , Because They Only Cooked By Sight And No Measuring Were Never The Way They Cooked Or Baked. My Mother Passed Last Year And I Had To Cook The First Thanksgiving And Xmas Dinner About Five Years Ago , Because My Mother Had Alzheimer's And I Also Cared For Her.     I made these yesterday! I used one-half of the dough and made the rest this morning! They are delicious! I just dipped them in Powdered sugar and others in Cinnamon Sugar! I took pictures, but have no idea how to upload them to your site! Thanks for the recipe!

    @@francesfehrman741 I made the total original dough, but cut it in half and refrigerated the rest. This group needs to use metric in their measurements, I always use a scale.
