Recipe:
Dijon Mustard
1 1/3 cup water
¾ cup white wine vinegar
½ cup yellow mustard seeds
3 tablespoons dry mustard powder
4 teaspoons onion powder
1 tablespoon salt
¾ teaspoon garlic powder
½ teaspoon ground cinnamon
1/8 teaspoon ground turmeric
1 1/3 cup dry white wine.
Combine all the ingredients except wine in a small nonmetallic bowl. Cover and refrigerate at
least 8 hours and up to 24 hours so the seeds soften.
When you’re ready to make mustard, simmer the wine in a saucepan until reduced by half, 15-
20 minutes.
Process mustard mixture and reduced wine in a food processor, blender or immersion blender
and process about 2 minutes or until smooth-ish. Transfer mixture back to the pot used to
reduce the wine and cook over medium-low heat until it slightly thickens, stir frequently, about 8
minutes. For smoother mustard use a fine-mesh strainer and push the mixture through using a
rubber spatula.
Portion the mustard into jars and let cool. Cover and refrigerate for 5 days to allow flavor to
mature. Store in refrigerator up to 6 months.
