    I have the old hand crank meat grinder that my Grandpa ground many, many, deer, steers and hogs through that he left to my late Mom, who left it to me. It still does the job. Tasty stuff. I like some valdelia onion in mine.

    You have some good videos on putting meat up. I thought I new a lot but I really learned a lot. I have made sausage with pork and killed hogs from a kid but have not dealt with deer, I have;NT deer hunted much just rabbit and ducks mostly. I really enjoyed this!

    I really enjoy the food videos you create.. shows hunters the possibilities of what to do with all the game meat that results from their efforts and the great possibilities! I'd like to know How long those summer sausages would be expected to keep? is it common to use EVOO to substitue for pork (fat)? How much do you think you use?

    We had a big hand grinder that my Dad adapted a single belt sheave to, mounted it with a motor on a board, and away we went. That was our main grinder for many years.

    I like to make smoked trail bologna with pepper jack cheese. I use 10 to 20% pork shoulder mixed in.

    Jeff, what kind of seasoning did you use in that summer sausage? Does the smoke absorb through that type of casing? Man, that stuff came out looking juicy, delicious - gotta do it! And I have to do a little bragging to someone who would understand - found a grinder just like your Carnivore, or like Meat your Maker brand - but it was straight from China - it's a #32, 1 1/2 hp. I took a chance ordering it, because it didn't even give the size or the hp. It only gave the pound per minute grind capability, but it was only $289, free shipping -- I was so elated when it came! It weighs 77 pounds. My three oldest grandaughters , ages 11 and 13, shot some really nice bucks this year, using a single-shot .223. The 13 year old made over a 200 yd shot! One of the 11 year olds shot a doe being trailed by four bucks - then, fast as she could, reloaded and shot the biggest buck, a really nice 8 pt., 150 lb. deer! But to beat all, her twin, the next day, first time deciding to hunt, shot a trophy 10 pt. ! We hunt on a small acreage in East Tx....Always enjoy your content - not afraid to improvise on any project. Keep living the good life the Lord has given us! -- Bob

    been making summer sausage for over 25 yrs. we get all of or seasonings from coyeager spice company. . and yes hand mixing is hard on the hads but its the only way to do it. we mix ours at every 20# of deer we add 5 pound of pork

    I like to use the grinder plate with the big holes first. Mix in the good seasons some pork fat if the meat is real lean. Then grind it with the plate with small holes into the casings. or just make patties.

    I like the olive oil idea. Grinding pork fat is always a pain as it gets stuck in my grinder plates.

    Cable ties from the dollar store is what I've used for years to tie the end of the casings. Works great and never have had an issue even in the cooking process.

    You need some high temp cheese for your sausage. You can get it in cheddar, pepper jack and a couple others from LEM in Cincinnati.

    Use some rubber gloves when you make big batches of sausage and you'll keep your hands from freezing, believe it or not those tiny little gloves keep your hands warm and the meat cold. Man those sausages look good!

    Use real fat , not olive oil or vegetable oil . 70% lean to 30% fat . Pork belly would be good
