How to make dandelion syrup. Sharing my recipe.
It's dandelion time here in Norway, and this syrup recipe has been a highly requested video for a long time, so I decided to make it this weekend, before I post any other videos.

Dandelions are amazing food plants, and a great beginners plant for foragers and people who want to learn about wild edibles. The dandelion syrup tastes like honey, and is often described as vegan honey.
Recipe key points:
01:42 Forage dandelion flowers.
02:37 Remove the green base and use only the yeallow parts of the flower.
03:07 Add an equal amount of flowers and water in a pot.
03:30 Bring to a boil and set aside (in a cold place) overnight.
03:48 Strain off through a clean kitchen towel.
04:20 Measure the dandelion juice and add an equal amount of sugar.
04:40 Bring to a boil and let it boil on a low heat for as long as it takes to get the right consistency.
04:57 Remember to sterilize the jar or container!

I made this yesterday, steeped it with a lemon. Turned out great, kinda hard to explain the taste, I guess it's like honey but more herby tasting. Pulling out the petals was a little tricky but I quickly got the hang of it, wouldn't say it was hard or tedious just a little fussy. Going to use it for my baklava tomorrow

Two really good things about this recipe. The product is called what it should be - syrup. It is also good that the petals are separated from the flowerhead. I look forward to making up my batch. Thank you.

I'm so glad youtube recommended me this video, I absolutely love dandelions! Not only are they pretty but as you said, you can make so many things out of them. Put hot pepper in vinegar for flower pickles.use whole dandelion flowers.taste great.

Hvis den erstatningen du bruker gir sirupskonsistens bør det gå an, men jeg vet ikke om et søtningsmiddel som gir det. Honning kan fungere, men da blir det nok mest honningsmak av den 😊
With canning jars you can also hand wash them and run them under scolding water or throw them in a dish washer.

Indeed you can! Personally I have found that it can sometimes not be clean enough though, and the canned stuff moulds, so I always recommend boiling to be sure.

Hei! Godt spørsmål, jeg har aldri prøvd så jeg er litt usikker. Min sirup varer i evigheter så lenge jeg er nøye med å bruke rene redskaper i kokingen og helle sirupen på et varmt sterilisert glass. Har dem i hyllen i stuen og tar litt fra dem innimellom. De har nå stått der i et år, er fremdeles like gode :-)

I don't to that normally :-). But I try to pick them in places where I know they are relatively clean.
So you add sugar with first batch or after the overnight

If you sterilize the jar and keep everything as clean as possible it could last for a year at least 😊

0.423 cups (about 1/2 cup) in 1 DL, or 6.76 tablespoons (about 7 tbsp) in 1 DL, for the correct conversion for the amount of sugar used in the video, that’d be about 3-4/3 cups.

You had me up until you added a boatload of sugar. If you read about sugar....which is a major inflammatory...wellll. Love the idea. Still love the idea and will try some form

Generally syrups are not "health food". Most of the time you do not eat the whole jar of syrup in one go though. I usually have mine for about a year, eating a little of it on my pancakes here and there. So unless you are trying to cut sugar out of your diet completely I think you will be fine 😉. Otherwise you can try and make it with a sugar replacement.

You are completely right, but this is an syrup after all. I use it as an alternative to honey, which also consists mostly of sugar. I'm making it right as we speak, but this time I'm also trying to make a small batch of dandelion jelly, which uses pectin and a lot less sugar. This might be a good option for someone who wishes to use less sugar! Of course, it will become a jelly though, not a syrup. Curious to see how it turned out tomorrow.

I am thinking of using Xylitol as sugar replacement. I haven't seen anyone yet using Xylitol for this recipe. I think I will try a small batch, just in case it fails. Xylitol benefits are so great. 🤩😍
