Confederate Army DANDELION COFFEE | Civil War Era Recipe | Hard Times -- food from times of scarcity

Тәжірибелік нұсқаулар және стиль

During the Civil War, the Confederate Army was often scrambling for provisions including life-giving coffee. Dandelion root coffee among others (acorn, corn, persimmon) was often made as a substitute, so since my lawn is filled with them right now, I thought I'd make a cup of #dandelion #coffee. ☕️

Hi Ma'am. New subscriber here. When my wife and I were dating she made me a coffee replacement once when we had run out of the real deal. She basically toasted some rice in a dry pan. Actually she took it pretty far past toasted. Like almost burnt. It had the taste of coffee without the kick. Awesome. We've been married for quite some time now and she never ceases to amaze me. :)

I’ve commented this before on an Emmy video involving dandelions, but roasted dandelion root tea absolutely saved me during my second pregnancy! And I do not say that lightly. I developed some very severe conditions due to my liver failing to function normally. This was entirely caused by pregnancy. It manifested into an excruciating, burning, itchy rash covering my entire body due to bile build up in my liver and the toxins trying to make their way out of my skin. I am not exaggerating when I say I looked like I had the worst case of chicken pox imaginable. My skin was covered in red welts/hives and it hurt to even put clothes on. I was constantly tearing at my skin because of the intense itch, and I didn’t sleep at night. Some nights, I would sit in a cool bath for hours crying. This lasted for 23 weeks of my pregnancy. As you can imagine, I was desperate to get rid of it because I was so miserable. I was given steroids and many other treatments by my doctor, all of which failed. I researched day in and day out, and finally discovered that dandelion root tea has been used forever as a natural healer of the liver and a natural liver detox. It was worth a try. After 2 weeks of drinking it, the rash that covered 95% of my body was only covering about 50%, and my bloodwork was coming back more normal. After a month of drinking it twice a day, I was nearly completely cured up until I gave birth. I only wished I’d found out about it sooner. I have such a huge appreciation for dandelions now. They’re a gift to this earth.

I'm going to admit I didn't believe this would really taste like coffee. I made some last night and I am shocked how close it taste to coffee. Mine tasted like a slightly weaker version of the coffee I usually drink (Newman's medium roast). But that could be that I didn't steep enough of the dandelion root OR I didn't cook it in the oven long enough. It did have that chocolately smell when cooking but some videos said that you almost need to burn it. Also, many videos said that you needed to dry the dandelion root for 2 -3 hrs BEFORE cooking in the oven for 30 minutes at 350 degrees. I eliminated that lengthy step by putting the DR in the food processor and chopping it up tiny. No need to dry it out for hours before cooking it. Thumbs Up!

Memories of my childhood, Mom making dandelion salad. Eaten often in the summer. Dandelion leaf's, diced onion, boiled little red potatoes, hard boiled eggs and crisp fried bacon chopped with a sweet & sour dressing. If Mom didn't have bacon or it was too hot in the kitchen she would get about 4 big spoon's of bacon grease that Mom saved in a silver metal container. The dressing was hot so when it's poured over the salad it would wilt the dandelions a little and the potatoes would soak up the sweet & sour dressing.

You can also add the flower petals to your salad. Soak the flowers to remove any dirt or bugs. Pinch the green cap off the bottom, sprinkle the petals on your salad. A warning! Pulling the roots will leave divot holes in your lawn! I pulled chicory up by the roots for several years and realized that "dips" were being left in the lawn. Now I wait for dry weather, push a hole next to the root, and pour boiling water down the hole. The thirsty root will eagerly take up the boiling water and cook itself.
