    I have my mom's cast iron crepe pan which she probably got in 1947 when she married. She just tilted the pan to spread the batter. Our Saturday night supper was crepes sprinkled with cinnamon sugar or spread with jam and rolled. I also love savory crepes - chicken curry or chicken & mushroom. Yum. Wouldn't complain about an ice cream crepe either!

    Great video as always! One tip: You’re putting too much butter on the pan. Cut it by half and the crepes will be much more uniform and smoother. (I’ve been making crepes for 20 plus years😃)

    I use a seasoned cast iron tortilla warming skillet. Using a shallow ladle I pool the batter in the middle of the pan then pick up the pan and roll in a circular motion to spread the batter. Works perfectly every time! No special spatula needed, just a wider width. I also butter the pan prior to battering pan and butter the top of each crépe.

    Growing up, I always made crepes in a regular frying pan and they came out pretty good that way. But I finally asked my parents for a pro-crepe pan when I turned 21 and they got me the exact same one that you use in this video!! It makes making really good crepes sooooo much easier, I love my crepe pan.

    Love your cooking videos! But the rozell (the wood stick) is supposed to be used on edge free crêpe machines. On regular pan, and a crepe pan is a regular pan, you should use you wrist so make the batter go to the edge! Love from France!

    John, I'm a new fan of yours. My husband's family is French and we make crepes every New Year's Eve. I used to make Crepes Suzette long time ago and it was always quite a presentation to see the flames. I need to do that again. Never used the orange zest, but I will now! Thank you, Carolyn

    It’s been my Christmas morning tradition for several years to make crepes Suzette and watch Trading Places (which has a scene with crepes Suzette being made) and this year I used your recipe. The crepes were fantastic and it was the best orange sauce I have ever made, thanks!

    My mother used to make them for us as a special treat and always used a large frying pan (seasoned carbon steel) but she used less butter. I made them the same way until I was given an electric French crepe griddle and that has its advantages, esp. in temp. regulation. Mom rolled her crepes. I fold them in half, place them in the sauce and then fold again to complete the process to collect more sauce inside. Our table server used to do both folds in the sauce, used less zest and less sugar...actually just rubbed sugar cubes on the oranges.

    Thanks for the lunch inspiration! I make my crepes in a regular frying pan. I don't have a non-stick, so I make do. Just a little sliver of butter in the corner of the an where I pour the batter and then I swirl the an around to even out the batter into a perfectly even crepe. Yes, this took loads of practice.

    I've been cooking crepes for 29 years and I still have bad crepe days! haha In my early 20's I would host "crepe feeds" where people would bring their favorite filling and I would make hundreds of crepes. The blender in the fridge overnight does make them easier to make the next day. I'm a fan of a ladle and a quick swirl of the pan.

    LOVE this Video... it brings a tear to my eye... I am also an Actress, and the first line I ever said in my 6th grade play was, "We must make Crepes Suzette"... (not knowing what they are... haha) I came on line today because as you mentioned (dinner party) ... I am in the midst of moving back to Albuquerque, New Mexico (US) to RE-Open my Acting Studio (I am supposed to be RETIRED.... Ba-hum-bug... I'm only 68 I'm not dead... and I miss teaching ACTING Students) This time, I will be incorporating teaching Acting for Mystery Dinner Theatre, so the students can seriously experience REAL LIVE Acting... I guess I will be the one to LIGHT the Crepes Suzettes at the table.. (my insurance just went up)!!! LOL Thank YOU so much for such an enjoyable video... as always ... You are the master...     I make them , put Dulce de leche on them, roll them and put sugar on top and use the torch and that sugar turns into caramel, Just DELICIOUS! Try them you’ll like them.

    I love crepes, many years ago when I was a student, I worked in a french cafe and made gazillions of crepes, for me your batter needed to be a touch looser. Great video as always though, now you've got me craving crepes xx

    I love crepes. One tip…to avoid butter to burn, use ghee instead which is in fact burnt butter itself

    I don’t have one of those wood sticks but I use a normal frying pan and just tilt it 360 degrees so any excess batter runs to the edge and it is round in shape. As long as you don’t put too much batter in it will be nice and thin if you do this quickly after putting the batter in the hot pan. Also adding fresh peeled slices of orange a few minutes before the sauce finishes cooking makes it a little bit nicer.

    Hey John, I have 2 requests: 1. Do you think you can record some videos on decorating cakes? I’m still in the process of learning how to pipe buttercream designs, like borders and flowers, and chocolate ganache. I struggle with the correct techniques and the consistency of the buttercream or whipped cream. 2. Do you know about other types of buttercream frosting? Like German, Korean, Ermine, and Russian? These are lesser known so I thought you would be interested if you didn’t know about them and maybe want to give your opinions on them and possible recipes. Love the content, and I love you 😘

    I've never made my own crepes, am going to try doing it now. Years ago I was served rolled up crepes with hot orange marmalade filing,,amazing. that was over 20 years ago and I can still remember how delicious and surprising they were.

    I know how hard it is to get the temperature right for low temp cooking on a gas stove. No matter HOW far down you turn the flame, it still boils, or burns what's in the pan. I found a simmer plate online that goes between the pan and the burner, that lowers the temperature enough to simmer properly, and reduce or dry out foods without burning them. It works great, and is especially good for simmering soups, stews, bone broth etc, and for making reductions.

    What do you suggest if I don't have the "swirling tool"? Just tilt the pan?
