    Here's a tip from an avid candy maker. It IS OKAY to stir and not use the corn syrup. Once the mixture comes to a boil cover it with a lid for 60 seconds. What happens is if you stir, the sugar crystals can get on the sides of the pan. Once the mixture is hot enough and the water is all boiled out, if a sugar crystal falls into it that's what causes the crystalization. You don't want that to happen. So if you cover it the steam will melt the sugar into the pan preventing any sugar crystals from falling into the cooked mixture 😁 I love explanations. Too many videos say "don't do this... Because this will happen" without explaining what it means or why it happens. Once you understand why and what, you can better understand how and how not ❤️

    From what i've learned, you don't need the corn syrup. I just did 1/4 cup water and 1/4 cup sugar and it was still very crunchy, keeping the stems on or off is your choice but if you keep the stems on, the little green part on the stem will make the stick stay in the strawberry better.

    Yes, definitely not necessary if you get the temperature just right. For me, it's a hit or miss without it, so I just always add corn syrup for guaranteed results 🙂

    Thank you for this foolproof basic recipe! I made it first with the corn starch, then I made it without the corn starch, for me it came out perfect both ways! A candy thermometer is a must, it Has to reach the hard crack temperature or it will not work. Also I needed to adjust from medium heat to a higher temperature so that it could reach the hard crack stage sooner. I’ve watched other videos saying how to do this but yours was by far the best one, thank you again and keep up the good work🥰

    Just add water and let it sit for one hour (longer if needed). Sugar will dissolve even though it look like it wouldn't 😉. No scrubbing needed.

    It’s easier if you use hot water (boiled water) because cold water will « freeze » the syrup

    You can also add the water to the dirty pot then boil the water, which will melt down the sugar!

    I didn't have corn syrup so I just added butter flavored syrup and idk how it'll turn out. But I hope it's good thanks for the recipe!! ☺💜

    When I did mine, it was perfect..but later on the sugar started to melt..? Was that because of heat or something else..?

    No, freezing is not needed. It's most likely you are not getting the right temperature. A candy thermometer would help.

    You can put them on parchment paper/ wax paper. Dollar tree sells it. And it tastes like a hard sugary substance like a non flavored blow pop lollipop with fruit inside. Basically what it is without artificial fruit flavors. Hope this helps

    It hardens up almost immediately at room temperature if done correctly.

    Not much info here..can you not mix in the begining.when can you start mixing. How long after it reached temp can you dip the strawberries?

    Mix whenever you want. Doesn't really matter. Dip strawberries as soon it reaches temperature and try to maintain temperature.

    It's not required if you have a thermometer. But if you don't have a thermometer, you can dunk it on water as a test to see if it will harden properly.

    Medium high to start then adjust as necessary to get to the right temperature on the candy thermometer.

    This video is perfect! I just have a question about the corn syrup??? Clearly I see that the syrup is needed to make this recipe foolproof (which is important for me lol)! I’ve never made this before, but I am wondering does the corn syrup change the flavor at all? Does it give the coating any sort of bitter/weird aftertaste? Also, if I enjoy the taste of, say maple syrup or Mrs Butterworth’s pancake syrup, could those types of syrups be used in place of corn syrup?

    Hi! I didn't notice any bitter taste with the addition of corn syrup. The corn syrup works because it contains different types of sugar (glucose and fructose) than table sugar, which is sucrose. Maple syrup contains same sugar so most likely have no effect. With that said, honey might work, as it also contains glucose and fructose.

    You need a thermometer to reach the right temperature. It's likely wasn't hot enough.

    Definitely need a candy thermometer. Probably didn't reach correct temp. for candy also if you do get a thermometer and it doesn't work try checking the humidity in the house. I was making candy apples one time and it reached correct temp but mixture wasn't right and it was due to the humidity. So make sure it not real moist in the house also.

    Without a candy thermometer, you can watch carefully the edges of the sugar inside the pot. If it starts to turn a slight hint of brown anywhere, even just a speck, that's a good time to dip the strawberries. Hope that helps 🙂

    You can but half of the time when I use just water and sugar, I get crystalization in the syrup and it ruins it for me. Adding the corn syrup makes it foolproof.

    If you take a basting brush and gently brush the sides with water it prevents the crystalation you just have to do it frequently

    Damn, I made these with my mom and it pulled out one of my jaw teeth. So a quick word of advice, wait until the candy coating is fully hardened before munching with your little chompers otherwise you're gonna need a dentist appointment.

    Sugar needs to be heated to the hard crack temperature 146 to 154 °C (295 to 309 °F)
