1/2 stick Butter
1/4 cup all purpose flour
1/2 onion diced
3-4 cups chopped broccoli
2 cups of Half/Half (you can use heavy cream or whole milk also)
2 cups low sodium Chicken Stock
1-2 tsps Better Than Bouillon Vegetable Base
1 cup Shredded Carrots
8-12 oz shredded Sharp Cheddar Cheese (Shred your own cheese)
salt, pepper, garlic, onion powder, red pepper flakes
Using a Box Cheese Grater, shred your carrots. Place your cheese in the freezer for 10 minutes before shredding to make it easier. Dice your onion and broccoli and set aside.
In a large pot, begin by melting your butter and then adding in the red pepper flakes and onion. Cook for 2-3 minutes or until onion gets tender. Add Veggie base and mix to combine. Next, add flour and mix to combine - cook for 1-2 minutes. Add chicken stick and cream - bring to a boil and add broccoli and carrots. Reduce to a simmer and cover with a lid for 15-20 minutes or until broccoli is tender. Optionally you can blend the soup with a hand blender to blend the veggies into the soup. Season to taste and then reduce/turn off heat and slowly mix in your shredded cheese. Once cheese has melted, taste and adjust as needed and serve.

Mr. Make it happen, that does look delicious, I make this soup every winter for my family, but I add just a few more flavors, 1 tsp. of dry mustard and a pinch of nutmeg and cayenne pepper. my family goes crazy for this soup!!!!!!!!!!!

It came out amazing I might have used less crushed red pepper cause of the kids but it was a damn win over here!
Looked @ the abysmal reviews for my local Panera and was like, "You know what - ima make my own!!!" Promptly followed Mr. Make It Happen's recipe, and i LOVE this soup! My husband just told me i put my foot in it, it's so good! And i was able to get it done in 90 min, chopping the veggies and everything!

I made this today. Subbed a tsp of Knorr's tomato w/chicken powder for the BTB veg because I didn't have it and it worked just fine. I used the whole onion, too -- not just half. Otherwise followed the recipe, which I almost never do. This was So! Darn! Good! I tasted before adding the cheese and decided it was good as a cream of broccoli soup and didn't even add the cheese. So easy and so delicious, and thank you so much.

I tried this twice! The first time it was great but I didn’t put enough broccoli. My rue always turns into paste 😂. I just finished this the 2nd time. It’s simmering and imma add the cheese. Thank u for your recipes! I always give u credit when they tell me how good it tastes! 😉

Ty 4 the recipe imma try my best 2 make this 2morrow...I just had dental work done & I only can eat soft food...I bought some creamy broccoli cheddar bisque soup in a cup from Wal-Mart however it has so much sodium in it & I'm on a sodium restriction so I would rather try & make it myself...ty again 4 the recipe
