How to make boba pearls at home

Homemade boba pearls for desserts, milk tea and other drinks.
Note:
1. Tapioca starch is the most commonly used option for chewy boba pearls.
2. Making part of the tapioca starch gelatinization is the best way of holding all the flour together and form a dough for further steps. I get several failure report for this one, mainly caused by the over gelatinization or lack of gelatinization.
3. If the starch is added directly to the boiling water or cold water, then we get a thing named as non-Newtonian fluid and can’t from a dough. So we add part of the starch in for the gelatinization. However if the starch is over heated or cooked, the pearls can’t hold the round shape and chewy texture after cooked. Becomes quite soft and shapeless. So please follow the steps exactly. I highly suggest watching the video and reading the recipe before starting since we do’t get too much time for thinking during the process.
4. The cooked pearls should be used within hours. If you want to use next time, freeze them after the shaping.
Ingredients you will need for the pearls
1 cup around 135g tapioca starch , + 2 tbsp. more for adjusting and coating
6 tbsp. water 90ml
60 g brown sugar

    please God somebody let me know if there's a difference between tapioca starch and tapioca flour because it just does not work when I mixed tapioca flour with water it gets to be the weirdest consistency it's hard as a rock but then it disintegrates in your hands

    From what I know (anyone please correct me if I'm wrong) you can use either and it should work, but that's also happened to me a few times. I'm not exactly sure why but I think we need to add less tapioca starch/flour at first?

    same here, you need to use tapioca starch i guess... sometimes it disintegrated in my hands too, you need to be fast, thats the technique... CORRECT ME IF IM WRONG GUYSSSS

    They are the same thing, it just has multiple names. And that happens because the water is too cold. Even if the water is slightly under boiling then it might not work.

    Normally people just put it in the fridge after you have made the balls, for about 10 - 20 mins... I think that should work... Not very sure though :)

    To make the tapioca pearl. I have used a fishing bait tray . Roll the dough like a log n put it on the tray n roll the lid on it n out comes the pearls

    Made it twice (ran out of tapioca starch) and none turned out right :( first one was crumbly but immediately flattens out and spreads like it's liquid, but if you pull it cracks like cement. Second one was just flat out dry and crumbly.

    Ughhhh if it were only this easy!! Does anyone know why when after 30 or so minutes my brown sugar comes to a boil and I add tapioca it doesn’t create a smooth mixture it turns super hard as soon as I mix? If anyone knows PLEASE let me know I’ve been craving FOREVER 😫😫😫😫

    I think Elaine explained in her vid description that if you add the starch when water is too hot, the mixture will become non-Newtonian fluid (oobleck is an example). I think that's why she only simmers the sugar mixture, then added only a half cup of starch first and then turn off fire and then add the rest

    30 minutes is the time to cook the finished pearls, NOT time to cook the sugar! You only want to dissolve the sugar and just barely bring it to a boil... you essentially made hard candy.

    Tapioca is chewy and has it's own unique taste and there are different teas you can try. Milk teas are more common, but some shops also sell fruit tea, and both types are usually sold cold. A popular bubble tea or I guess milk is brown sugar pearl milk which is basically tapioca in brown sugar caramel and milk as the drink, but some have tea in them also, hope that helps :) and by the way to indicate that a shop you go to has tapioca that isn't up to par, tapioca should be a good amount of chewy, soft yet have a bite to it.

    Try to use a thinner pot next time or shorten the heating time. By the way, be quick when stirring after add the flour and transfer to the operating board as soon as possible.

    I’m confused about the sugar it looks like she made 2 different batches of sugar with water 1 was made with a light then another with dark but it doesn’t say that n the description and in the video it don’t say what one was what I have muskavato sugar which is what many recipes use but now I don’t know how much cause for 1 it’s labeled in grams not cups so confusing

    I'm not sure about the slabs but for the syrup you can use brown sugar and water and cook on low-medium heat until it's thickened.

    FYI for some people tapioca starch and flour are actually different things and you won’t be successful if use the flour. I find using tapioca flour with packing that says “also know as tapioca starch” is better

    Yes. You can even use white sugar. Sugar is only for sweet flavor and color.

    The starch is slightly over-heated and thus can't hold the shape. Use a thin pot less time or slightly shorten the heating time, speed up the whole process.
