Best tool to scrape out eggplants is a silicone spatula. And if you don't really like the taste of fresh garlic, wrap the garlic in alu foil and bake them together with the eggplants. No need to clean the cloves, they get soft and you can squeeze them out. Roasted garlic has a mild nutty taste, just lovely.

I usually buy a platter that comes with Falafel, baba ganoush, Hummus, Tabouli, Kibbeh, Stuffed grape leaves, and rice pilaf from the Lebanese restaurant near my house but my wallet has been going through some distress lately 😅 so I'm definitely gonna give it a go and make it from scratch at home. is it possible to fill it in jars and keep it longer...maybe a few months ?? that would be useful during off-season when the eggplants are extremely expensive.

Great video and not only is the babaghanosh vegan but also barely any carbs - so no harmful insulin spike❤️👍
Just a fun variation that I like doing is roast a bulb of garlic coated with a little olive oil and wrapped in foil the use that instead of the raw. Raw garlic is great but roasted tends to be a little milder. Either way, you be you.

Yes! The garnishes are completely optional.
All good But I pierce the eggplant with a fork all around and then grill it on my stove all around then I put two peeled garlic with salt and crush them into a paste then I add tahini ( sesame seed paste ) and usually I squeeze lemon 🍋 but I find white vinegar gives it a even better taste and mix it all together then decorate with olive oil and chopped parsley around it 👍🏼🇱🇧❤️🇦🇺

I do this too - firing the eggplant skin over the flame before baking. Gives it an extra smokiness that’s amazing.

For best results, I'd follow the recipe as is! However, instead of tahini paste, you could use olive oil!

great recipe but need 2 tablesoons of yougart to be added 😃😃😃
For me, I personally don't like blending the mixture into a completely, fine paste that which kinda looks like chocolate ice cream. I like very small chunks and eggplant to give that texture and that BITE.

You can find the tahini at Middle Eastern markets, natural-foods stores. Most large supermarkets now carry it as well, often located with other Middle Eastern ingredients or in the peanut butter section.

I would use American eggplant.
Both - tahini and olive oil have to be used for proper Baba Ghanoush. Also, kumin is needed.

Because the skin is exceptionally tough & often bitter
but it's Moutabal and not Baba Ganoush. Baba Ganoush doesn't have tahini at all & Moutabal has yogurt ! Most people just mix this two.

Horrible recipe. You didn't tell what to do with the seeds inside eggplants, tried it with three different ones full of seeds. After two hours of being in the oven they're still raw I'm thinking they're made of steel. Definitely puncturing will help next time and using grill
