    I prefer to add the seasonings to the cream and stir *before* adding the potatoes; it assures a more-even distribution. Other than that, this is exactly how I make them, and I just love them.

    I know the secret is a lot of cream and butter but there truly is something magical that happens with this in the simple and clean mix of potatoes and fat, it really is something else. It's my new standard potato dish because, at least for me, this is somehow easier than a mash or scalloped potatoes. Better, too

    @@chrissewell1608 It actually is. In my rush at the store, I didn't realize that I needed more than the one container of heavy cream that I bought. Also, I couldn't find light cream. I like cream, so I didn't care. I was a bit short, but, it didn't matter. Also, the butter I used was salted because, well, I love salt as well. Im making this again either tomorrow or on Christmas day and I'll follow it to the letter when I remake it. Not sure if I'll use unsalted butter though. May just stick with the salted butter I already have on hand. But then again, if Im buying the heavy cream (or light if I find it), I may just grab the unsalted butter. Everyone that I've let try it so far has absolutely loved it. That's been 8 people so far.     @@Red-ct6wx I use light cream. You should be able to find it by the heavy whipping cream. Most stores I've been to only carry the 16oz sizes, so look through the smaller containers if you have trouble finding it.

    These potatoes are as delicious and easy to make as they look. I brought it to Christmas eve dinner and everyone agreed that it was their new favorite potato dish. Dad was the biggest fan and knows his comfort food so I know it was good. I added all the cream at the beginning and was worried it wouldn't thicken up enough after baking, it came out just a little runny, but that didn't affect the taste at all. My family and I actually preferred it this way because after sitting overnight, the leftovers had thickened up a bit more and were just as good. We enjoyed them both ways. I used salted butter this time, but I might try unsalted next time to see how much it affects the taste.

    These are the best potatoes, there delicious!!! I have a family of 3 and i normally will half a casserole recipe depending on that recipe , this is one I do not cut in half as I know it will get eaten, infact I want leftovers of this recipe!!! Ashley is the potato queen in my eyes lol , her parm crusted potatoes with dip are also to die for and one of my family's favorite potatoe dish , there just drooling when they see I'm making parm crusted potatoes with the dip !! 😋 or of course these lighthouse potatoes

    Tried this today, recommended simmering the potatoes in light cream with lid OFF. Reminds me of eating clam chowder but the potatoes cook wonderful if following their time chart.

    Ladies, outstanding recipe & mine is very similar. I'm a 56 yr. old irishman so you had me at potatoes, lol, yes the stereotype is true, we love our taters, i eat them appx. 300 days a yr., rice/pasta 35 days, fast 30 days a yr., i never heard of litehouse inn, but my only differences are day old irish soda bread blended to crumbs in place of panko, & swiss gruyere cheese( my fave) in place of parmesan. Ms. Ashley with that gorgeous auburn/reddish hair has to be irish or scottish, which makes her my sister, lol. I will try the panko, but stay with my swiss gruyere cheese.

    Love this recipe! Have made this several times with great success. Takes having a potato side dish to a whole 'nother' level. 😀 Note that in the video, they mention that the New London Lighthouse Inn shuttered its doors. Well, it must have re-opened because when I look it up it says it is now open. Gets great reviews! Hope to go there someday. 🤞

    The restaurant business will simply not allow you to stagnate. There is such a fine balance between the required innovation and retaining your old standards. The hard truth is that the family who come once a week for 20 years aren't bringing you new business and if your outreach on all the appropriate channels brings people to a menu that hasn't changed since the 70s, they will never come back and they will write bad reviews. Innovate or die.

    A must is russet potatoes. Tried using up my Yukon gold. Just not enough starch to thicken the sauce. I even used about 3 pounds. 1 inch chunks was just too big with Yukon gold.

    My guess is they clean it daily since it's a commercial kitchen. I suppose it's easier to clean if you do it every work day. But I sure would like them to help me too...🙂

    It will be just a bit thinner than Lite Cream, but it should be okay [The Recipe Police will not show up and arrest you] -- of course, you could always add a bit of heavy cream to it if you really wanted to.

    Hi Victoria! Light Cream is labeled that way on the carton (and half and half is equal parts milk and light cream). If you can't find actual light cream, heavy cream does work! Enjoy!

    To turn this into a different casserole, add dried beef (like the Armor dried beef in a jar), I add a 4 ounce jar. Just put the dried beef in a bowl, cover with boiling water, let sit for 5 minutes, this takes much of the salt away. Then pour off the water. Cut the circles of (I just pile them up and slice them into thin shreds). Add this when the potatoes have finished cooking on top of the stove. Then finish the dish as usual.

    @ Debbie Coleby , ma'am there is heavy cream & some places sell lite cream, lite cream would be very close to half & half, that will work fine i'm sorry if you don't know but you probably do, ( 1/2 & 1/2 is equal parts of milk to heavy cream, if you can't find it buy heavy cream & milk, mix them 50% each to your desired total.) I'm 56 yr. old irishman, some places call it lite cream, others 1/2 & 1/2. I hope that helps. Merry Christmas & God Bless you & yours.

    Just saw your comment when I was reviewing this to make this TG. Apparently light cream got phased out by the dairy for the most part as a creamer after half and half hit the market. In order to get a product with 20% fat needed for this recipe mix equal parts heavy cream and whole milk.

    I hope someone can help me. I have been cooking for years and years and want to make this. I have no clue what LIGHT cream is. I have been to 3 stores looking for it thinking I have just not ever noticed. I have heavy cream and half & half on hand all the time. Is half & half considered light cream? I am at a loss on this. I asked my mom today if she has ever heard of it and she has not either.

    Half and half will not work, it’ll break. Light cream used to be in stores but not much these days since half and half is preferred as a creamer. Use equal portions heavy cream and whole milk, this will give you the 20% fat content you’ll need for this recipe.

    Any reason not to refrigerate a day before cooking? Make ahead much easier for Christmas.

    Other than it may take longer to heat all the way through (probably more like 25-30 minutes), so, depending on your oven, you might have cover with aluminium foil for the first 10 minutes or so to stop the top overbrowning. Otherwise I don't see how you couldn't make this ahead.

    Hi Rick! You can totally make these ahead of time. Here are the instructions from the recipe: TO MAKE AHEAD: After potato mixture has been transferred to baking dish, let cool completely, cover with aluminum foil, and refrigerate for up to 24 hours. Before applying topping, bake, covered, until heated through, about 35 minutes. Apply topping and continue to bake, uncovered, 15 to 20 minutes longer. Enjoy!!!

    So my grocery stores only have half and half and heavy cream.... no light cream..... ideas?

    Mix them together. In other words, dilute your heavy cream with some half & half.

    2c heavy cream and 1 c milk someone suggested. Or a dollop of heavy to the 1/2 and 1/2

    Use either or mix them up… You can even use whole milk or any milk for that matter depending on your diet
