HOW TO MAKE ARROZ CHAUFA OR PERUVIAN FRIED RICE | Peruvian-chinese fusion

Hello everyone!
What we have here today, is one of the most famous Peruvian-Chinese fusion dishes created in Peru, and this is Arroz chaufa (Peruvian fried rice).
Fried rice is a dish commonly eaten EVERYWHERE and the versions or ingredients used on those are the results of mixed cultures in different areas.
But, this Peruvian-Chinese fusion brings us “CHIFA”, which is a unique Chinese-Peruvian fusion which as a result, gave us another dish which is one of the most representative dishes of Peruvian modern cuisine. I'm talking about “Lomo saltado”. So, you can imagine how important this fusion is for us and for our culinary history.

    To everyone. Sorry for the bad quality of this video, this is literally the first video we ever made but, we wanted to show you this anyway because this marks the beginning of this project and is really important to us. Also, from there we are learning to improve the quality of it to make it more enjoyable for everyone. I hope you enjoy it and stay tuned for the awesome content we are bringing for you next week. PS: This is how I prefer to make fried rice but definitely not the only way... normally people don't use onion but I think that adds a really good flavor. Thanks! :)

    I always thought it interesting how the Chinese immigrant cuisine became adopted as Peruvian cuisine. I can't tell the difference in fried rice. 😀 Personally, I like to do the same as in the video, but also add some vegetables (I don't know if that is Peruvian). Easy and tasty are frozen peas thawed in water, but maybe that's American style fried rice. Thanks so much for the excellent videos, and I look forward to many more. P.S. Besides civeche (thanks), I and my girlfriend loved the causa in Peru. I hope maybe you can demonstrate that.

    Hi Carl, There are different dishes ina "CHIFA" food that involves more vegetables than others, we can see "Ti Pa Kai, Chi Jau Kai and Kanlu Wantan" as examples. Is not common to use peas in these dishes but the result is definitely really good and I've tried Chinese food in USA and can tell you that is amazing and so tasty, but as born and raised in Perú, to me nothing can beat this awesome Chinese-Peruvian food we have (Lomo saltado is the most famous dish that was born thanks to this fusion). I'm glad you enjoyed Ceviche here (you have to watch my Ceviche video) and I promise that very soon I will upload a video explaining and making Causa a la limeña, a dish that was born during wars, and an awesome way to replace the famous Peruvian yellow pepper that is quite unique and only grows here in Perú.

    Hola Danna, El arroz hay que prepararlo solo con sal y el ajo es opcional. Yo trato de prepararlo 1 día antes. Muchas gracias! Espero que puedas hacerlo en casa u si puedes, mándanos una foto por Instagram a cooking_ricardo :)

    Hi, we had Chinese immigrants in Peru after slavery was abolished back in 1854 and at the end of 1800s, we had the first Japanese immigrants. Apart of "chifa" which is how we call Chinese Peruvian food, we also have "Nikkei", which is the Peruvian-Japanese fusion food.
