    Every time I watch one of your videos it gets added to one of our upcoming weekly menus. To Jack's point about red lentils, everything he described about how they cook is why they're one of the best lentils options for vegan chili. I was never a fan of vegan chili until we used one with red lentils and they cook and breakdown similarly to the way some beef chilis would.

    So happy you did this. I am currently doing my best to add legumes too everything. Everything is way too expensive here in Canada. 7 bucks for cauliflower.

    Sumac is delicious. I frequently mix it with olive oil and brush it on fresh flatbread to use with hummus.

    I'm surprised the kofte wasn't seared. I bet being brown and crispy on the outside but soft and tender on the inside would be heavenly.

    Our Turkish restaurant around the corner always serves lahmacun with a salad of red onions, tomatoes and cucumbers with sumac, red pepper flakes, olive oil, lemon juice, and pomegranate molasses. So good, but your salad is a beautiful alternative. Yum! If you want less moisture in your salad and lack time you can also remove the cores of the tomatoes and the cucumber.❤️

    Loved the salads and the kofte as I am looking for meatless meals. Curious whether the flatbread could be used to make personal pizzas or is this bread too thin/pliable for that use?

    You should try it and let us know. I don't see any reason why you can't use it for pizza. People eat thin crust pizza all the time. The thinner the better. And if someone tells you not to try it because that's not how it's eaten, don't listen to them. You're not forcing them to eat it. There's no harm in trying something used in a new way. That's how cooking and cuisine evolve. There had to be someone who first thought to try chocolate to see if it was tasty. I know chocolate has nothing to do with this flatbread, but my point is there always has to be a first. So try making pizza with this flatbread, be the first. If it's tasty others will follow and that's how you change food history. I would be right there with you but sadly I can't. I am unable to swallow and I have a paralyzed stomach so I'm on a formal diet that I consume through a feeling tube surgically placed in my small intestine. For the moment I have to live through others trying food items. Friends and family have asked me if watching cooking shows is hard for me since I can't eat. TBH I love watching cooking shows. I don't associate one with the other. Anyway my point is make your pizza. If you don't like it then you'll know, but it could very much be the most amazing crust for a pizza and everyone should be eating it this way. Good luck!

    I made personal pizzas with this recipe when they initially posted it a few months back. They were fantastic - the crust came out thin and crispy and full of flavor! Just do not overload them with very heavy toppings - a ton of sauce or heavy meats may make them too difficult to handle.

    @@miglebyte Sounds tasty. It's my opinion that you should never put too many toppings on a pizza, 3 at the most. I think a crispy, cracker like crust lends really well to say a BBQ chicken pizza. You don't want the toppings to overwhelm the crust but at the same time you don't want the crust to overwhelm the toppings. It's a very fine line and I miss it.

    You can, but you will need another measuring cup to catch the water before you pour into the food processor and it may be that they thought this would be just as quick as anything since once the ice is extracted, the water is ready to go.

    Is there a wheat free option for the Kofte? Is it possible to substitute ground chickpeas? What about reducing the amount of water in the lentils and using whole, shelled chickpeas?

    You should be able to substitute Fonio for the Bulgur.

    Fine bulgur can be found if you're lucky enough to live where middle eastern markets can be found. They can be found online, but more expensive.
