The ratio of fruit peels to brown sugar to water is roughly 3:1:10.
Fruit Peel: 3 parts
Brown Sugar: 1 part
Rice Water: 10 parts
Three signs for completed fermentation:
* All the fruit peels have sunk to the bottom.
* There is a clear separation between liquid and fruit residue.
* There is a layer of white natural yeast on the surface of the liquid.
The process takes about 1-2 months in summer and 3-6 months in winter.
