    Finally realized that friendship bread is the base of my mom's banana bread! I was always disappointed in banana bread recipes, because they never came out sweet or moist like I remember. As soon as they cut into it, it was confirmed. Definitely explains the cinnamon sugar crust too

    I made this last week, and I'm telling you, it was difficult to SHARE it tastes SO good!!! However, I did share, sliced one loaf into thick slices, then cut each in half, placing them on pretty paper plates and wrapped in plastic wrap. I gave these out to several neighbors and they were all RAVING about it, asking for the recipe. It is the most flavorful, moist bread, perfect for company with coffee for breakfast, or for a snack! Dont miss ONE of the steps, and it will be perfect!!! I'm making it again early and passing it out to neighbors/friends again!

    debi, did you use the 8 1/2 x 4 1/2 pans? The pans looked bigger in the video and I usually get 2 9x5 loaves of other breads out of that much flour.

    @@deb218 that’s a great question!! I’m no expert baker and have the standard size loaf pans. They didn’t rise over the top while baking so we’re more flat on the top than the regular bread would be. They were fantastic. Glad you asked a question, it reminded me to make these again this week! 💛💛💛💛💛

    The Amish friendship bread we made when I was in high school had a starter like sourdough. My friend gave me a starter and directions. It was fed until the volume grew. You split the starter to make your own loaf and to give a starter to a friend.

    Once the starter had been fed and grown to the size that all one’s friends already had some, there were pancake and waffle recipes to make too. I cannot imagine calling this recipe Amish Friendship Bread without using the starter, just as one would not make a loaf of sourdough bread without using sourdough starter.

    I only saved about 1/2 of starter so I didn’t have so much. I just used 1/2 c. milk, flour and sugar for the feedings.

    I really enjoy your magazine. I am 84 and am a vegetarian for 44 years. My mom passed at 96 and she was a vegetarian for over 60 years. I am hoping to make the Amish friendship cinnamon bread soon. Thank you

    The bread looks delicious and I will most likely bake some up. But, it isn't Amish Friendship Bread. I used to make it frequently back in the 80's. It requires a fermented starter mix (can take up to a month of fermation depending on the recipe). You would keep one cup of the starter for yourself to make your bread and pass one cup to friends along your favorite friendship bread recipe. They would add the same starter ingredients to your starter and allow their batch to ferment - and on and on. Never saw one calling for pudding mix but cinnamon and sugar were musts. It wasn't unlike the pandemic sour dough starter sharing some of my friends were doing last summer.

    I have yet to make it, but the one other recipe I've seen called for starter to be added to the bread. I'm a little disappointed that they didn't include it here.

    I made this vegan by swapping the eggs for flax eggs (1 tbsp ground flax: 2.5 tbsp water), and soy milk with a little spoonful vegan yogurt as a substitute for the whole milk. It turned out absolutely delicious!

    My Cooks Country magazines have an honored place on the bookshelf. Love the presentation with these two women, they interchange with each other so well. Wonder about the recipe...would farm folks have vegetable oil? Shortening- like something. Is...question I've had forever....is peanut oil always a substitute for vegetable oil? I'm able to buy peanut oil in smaller bottles, but prefer it too. Something you do in the magazine, you could do here....I just love that feature...somebody describes a long lost recipe...Name that tune...love that.

    It is very sweet! I cut back to 2 1/4 cups and will reduce this to 2 cups next time. My pans are not ridged, so the oil did not stick to the sides and thus no cinnamon/sugar on the sides but that's ok. Lots of sugar crumbs - put parchment under your cooling rack.

    @iYou iTry I agree with you that overindulgence in sweets isn't good. However, if you're metabolically healthy and live a balanced life, a small portion once in a while won't hurt you. There are a great many other dietary factors that contribute to metabolic syndrome and diabetes.

    This has been the easiest dessert I have ever made. Even my cookies might not come out soft, but this was perfect. I have made it 3 times now, adding chocolate chips or pumpkin spice chips. My whole house loves it, and my friends that have tried it!!!

    Oh that’s gotta be lovely with a cup of coffee, unsweetened of course. This is one of those recipes it’s good and easy to memorize. Because it something you can put together last minute as all the ingredients ppl usually keep on hand. I would even play around with it and add orange zest to it. I love the combo of warm spices and orange.

    I have a question, hoping for an answer. I made this recipe. I'm used to making the "instant pudding" version of Friendship Bread. I usually use buttermilk (not milk), as a levenor. This recipe seemed to be too liquid-y (for lack of a better way to describe it). I did add a handful of raisins. Very flavorful recipe, however - It SUNK DOWN in the middle, rather than rising! I bake Friendship Bread every week to sell at my local l Farmers Market. Because I am presenting it to the public for sale, it has to look pretty as well as taste good. Any suggestions as to what would cause this?

    I make friendship bread often. I freeze my starter at different stages so I always have something going on. You can also change the flavor of the pudding to change it up a bit.

    When they mention starter, I was thinking some sort of special yeast, as in cheese or beer. What gives? French toast cousin. I cheat. I get slices of store bought bread, butter the top, spread cinnamon and sugar on top in swirls, and use a toaster oven. It becomes crunchy because of the sugar. I call it down and dirty cinnamon rolls without icing.

    Butter is 15-20% water which might instigate some gluten formation, the oil gives a more tender crumb and texture --- but with the amount of sugar bringing moisture to the game the difference may be minimal. It might be good with brown butter since the water is boiled off and, well, brown butter is delicious.

    I feel mislead and disappointed you didn't include a recipe using the starter and instructions on how to prepare a batch of starter for to give to the next friend. This misses the whole point of the premise teased at the beginning.

    As per the recipe on their website: "Rather than sharing starter, we designed our recipe to make two loaves, so you'll have one to give to a friend." Obviously it's not the same, but it's cool to have a quick bread version to share instead.

    Noticed your eggs dont have the white embryo and placenta looking membranes on the yolk that are now on all grocery store eggs. Where do you get your eggs?

    It’s not a placenta. It’s the chalazae. All eggs have them. They keep the yolk in the middle of the egg. My guess is the show’s food stylist removed them. You don’t need to. It’s just protein.

    I thought the same thing. My recipe for friendship bread lets the starter ferment for days first. The fermentation gives it such good flavor!

    Exactly. When I lived in Amish country I regularly received a bag of starter and instructions on making friendship bread. That starter is the secret ingredient; without it, it's just cinnamon cake.

    Exactly, it's talked about in the beginning of the video but not used in the recipe. Back in the 90s I made so many of the versions that used the starter and the box of pudding (many different flavors of pudding) and they were fabulous. The starter really did add a distinct flavor to the bread.

    I think it looks amazing and I'm eagerly anticipating making it again after not having done so for many years. However, I'm disappointed they didn't share how to make the starter that you give to someone else, including the directions on how to keep it going. That's the biggest part of the "Friendship" in the title.

    *sigh* I don't know why I make anything from ATK. It rarely turns out and I am very careful to follow the directions exactly. This overflowed the pans, never set properly (fell in the middle) and the outside was done but the inside was raw. I made their 'ultimate banana bread' a week or so ago with the same pans and it came out perfect. This one just sucks, and was sooooo disappointing for all the effort.

    What size pan did you use? She did say that it had to be an 8 1/2 inch. For a large pan, there are different instructions on the website (which I haven't looked at).

    I wondered about the pan size. She said 8 1/2 x 4 1/2 but I get 2 9x5 loaves out of 3 3/4 cups of flour!

    The Amish do not use vegetable oil. Nobody used vegetable oil more than a 100 years ago. Give a butter recipe.

    Too much sugar, not enough starter. You know what else is delicious? A bowl of straight-up cinnamon sugar. But that doesn't mean you should.

    700g of Sugar??????? you Americans are crazy with Sugar , I would have to cut it down to 250g to be able to eat it. I think 125g of sugar per loaf is ideal.

    Amish Friendship Bread is a sourdough quickbread. The starter is fermented over 10 days. Absolutely love the flavor of real cinnamon. I really dislike the storebought cassia with a passion. Yes, the instant pudding is necessary. The recipe here is nowhere near the authentic recipe. Really disappointed with the way they handled this.

    I made this recipe and I am a good pretty baker. Not enough cinnamon (I actually added more) and it turned out really dry. Weird top. Had to throw it out. This is the first recipe from America's Test Kitchen/Cook's Illustrated that has been a failure.
