Sate & yakitori, while looking similar in some ways are substantially different. Sate features various meats (beef, pork, chicken, duck, etc) and are usually grilled over charcoal. That’s where the similarity ends. Yakitori highlights each of the many “cuts” of chicken. For instance, there are many cuts (or separate parts) of just the thigh itself including the inner thigh muscle, the knee or knuckle, etc. a main feature of yakitori is the varying tastes & textures of individual parts of a single chicken.

The most confusing thing about this vid is him wearing a plastic glove to prep the chicken.
i'm surprised he threw away the carcass of the chicken and not make chicken stock for soups. Also next time wear quieter plastic gloves.
