Hey there, today I'm going to show you guys how to make a super quick but super fancy and delicious beet and goat cheese salad.
Here's what you'll need:
Dressing:
-1/4 cup olive oil
-1 sliced shallot
-1.5 tsp lime juice
-1/4 tsp chili powder
-Pinch of gochugaru
-Salt and pepper to taste
Salad:
-3-4 sliced beets
-1 cup roasted corn
-5 mint leaves chopped
-1 cup of arugula
-2-4 tbsps goat cheese
-Drizzle of balsamic glaze
-1 tbsp fried shallots
Mix all the dressing ingredients together. In a bowl toss the arugula with a bit of the dressing, then place in a bowl with the beets, the goat cheese and the corn. Drizzle dressing over everything, then garnish with the mint, the fried shallots and the balsamic glaze. Now eat it!!!!
