Lady Braybrooke's son-in-law, Mr Strutt, is to go to London on the train, so Mrs Crocombe is busy preparing him a picnic basket for his travels. These handmade sausage rolls, accompanied by refreshing raspberryade, will keep him sustained on the journey - and will make an unusual addition to your own summer picnic, too.
English Heritage is a charity that cares for over 400 historic buildings, monuments and sites. Find out how you can support our work here: bit.ly/38Cv9lA
INGREDIENTS
For the sausage rolls:
• 350g sausage meat
• Bread dough to make around 12-13 rolls
For the raspberryade:
• 115g brown sugar
• 100g redcurrants
• 125g raspberries
• 4pt water
• 1tsp cream of tartar
• Heated water
METHOD
Sausage rolls:
1. Divide your bread dough into a baker's dozen (13) rolls
2. Make a dimple in the centre of each roll and fill with sausage meat, enclosing the dough around the meat to make a parcel
3. Bake in a fast oven (200-220°C) for 20 minutes
Raspberryade:
1. Place your raspberries and redcurrants in a mixing bowl
2. Add the sugar and bruise together with a pestle or wooden spoon
3. Add enough hot water to dissolve the sugar
4. Leave to infuse for several hours
5. When the fruit flavour has sufficiently infused, add a teaspoon of cream of tartar to create fizz
6. Ladel into bottles using a funnel and seize or muslin to remove the bits, making sure to use bottles that are safe for fizzy drinks

We hope you enjoy the latest episode of The Victorian Way! Here are the answers to some questions you might have about this recipe... What's brewer's yeast? In 1881 there were two types of commonly used yeast. One was brewer’s yeast, sometimes called barm, which was the froth taken from the top of beer when it was brewed. It was quite weak and not very reliable. By the 1850s a new type of processed yeast was available, known as German yeast or compressed yeast. It came in blocks and is usually sold as fresh yeast today. You could use a sourdough bread dough, but it was rare in Victorian Britain and regarded as 'poverty food.' What is lardy cake? Lardy cake is a bread dough based cake which was very popular in the Midlands and western East Anglia. What's a baker's dozen? A dozen is of course 12 of something, but a 'baker's dozen' refers to 13. A leading theory for this is to do with the size of loaves. In Medieval England, bakers found to be selling undersized loaves could face fines or even flogging. So it's thought that many bakers supplied an extra 13th loaf with their dozen, just to be on the safe side - hence, Baker's Dozen. How did Mary-Ann glaze the rolls? A common way to get a nice glaze on bread rolls is with an egg-wash. Just brush on a mixture of egg and water before baking. Alternatively you could use milk or cream, butter (or margarine) or simply a brush of oil. Can I visit Audley End House for myself? You can! I really does make a difference to have a good relationship with good suppliers. I live near a market hall that was established in the very early 1800s. The quality and prices are much better than what I used to buy at supermarkets. The chicken I buy at my butcher's (established circa 1880) there, is rich with flavour. And the produce I buy at my greengrocer's there, is seasonal, local, and perfectly ripe... unlike the supermarkets' produce, which was shipped in from a long way away, while still unripe.

I actually find it kind of surprising how much this shows a nineteenth-century country manor house functioning in ways I think of as "urban": bread bought from a bakery, and sausage from a butcher's shop, rather than having their own baker to make bread from grain grown on the estate and their own butcher to prepare meat from livestock raised on the estate. I guess you have to go farther back to reach the times when these estates were more self-contained.
@merchantfan
Ай бұрын
Butchers have been a village mainstay for a long time, not many people want to deal with all that blood and gore to clean up and the butcher would have more variety than just going to kill an animal (not to mention if you want a cut of cow or pig there's a lot of heavy duty work to cleave the body apart while saving as much meat as possible). Villages also usually had a baker bc ovens were huge fire hazards but I'm guessing back when white flour was a lot rarer it made more sense to make bread in the manor since the stuff from the village baker was probably 'yucky' whole wheat and barley.

@@mynamejeff3545 it's about an hour today from London Liverpool St to Audley end (lovely day out, highly recommend, but clearly I need to up my snacks game next time). One can look online (e.g. National Archives) at Victorian train timetables and the journey, depending on the service, is approximately two hours. After the "Railway Mania" of the 1840s there was a lot of infrastructure build and train travel was considered fairly reliable, especially in the Home Counties. Even tripling that, I think I'd survive with that picnic. Yet, I believe Mrs Crocombe, redoubtable as she is, was preparing for every eventuality by giving one adult man a half dozen large sausage rolls; the same again of sandwiches; about the same of some generous looking biscuits; plus strawberries and cream; two bottles of raspberryade and a bottle of claret from Mr Lincoln for a journey of way less than half a day. I doubt he would have needed to resort to the inferior refreshments available at either station.

It’s not exactly the same thing…but there was a great show called; *Lords and Ladles,* which had a team of chefs going to these manors and recreating the exact historic menus that were documented/served (typically the menus were for a special occasion). They use not only the exact recipes, but try to always use the same cooking equipment, types of ingredients, harvesting/hunting practices and methods of preparation-even the tables are set in an era accurate way! (And since the items are usually passed down as family heirlooms, oftentimes the tables are set with the very same decor/serving items that were used at the actual event). I wish it had been given far more seasons than it was-but the few seasons we have are still fascinating!!

It's interesting that sausage rolls have been around since at least Victorian times. I'm not sure I've ever seen them made with regular bread dough, the ones I've seen in the UK are more like puff pastry.
For the sausage rolls, you'll need: sausage, and rolls
My grandmother made fresh bread every morning. Of course, her schedule wasn't busy like mine and life was much simpler. It's good to slow down and enjoy the simple things in life like a picnic.

no, your grandmothers day was just as, if not more, busy as yours, she just had it down pat to make it look like she was not rushed off her feet. remember she did not have all the conveniences we have today
I don't know why but i really love the initial opening sequence with the manor and music. It always put me in a good mood, setting the tone for a good video.
Life in the Victorian manor seem so normal and peaceful with its own rhythm according to seasons and social obligations; for the upstairs and downstairs. There’s a certain sense of security in the predictable. Changes may seem exciting but know how your day to day goes would make me feel like the world is right.

I think that might be the reason why period romances are so popular. The authors try to convey that sense of order, with everyone "knowing their place" which can be very reassuring.

Psychologically, even positive change causes stress. It makes sense that some people would find an inflexible structure dictating their days soothing. It would probably contrast horribly with any necessary changes and cause so much distress… Maybe that was why they made “an occasion” out of so many transitions - to help them adapt their inflexible thinking to changes.

Remember this is a romanticized image of what it was like to live and work in a Victorian mansion: this exact life was infamous for being stifling and mind-numbingly dull for the upper classes, and hard work for little pay for the servants (Mrs. Crocombe has only a half-day a week off, and that's for a comparatively well-respected upper servant). There were a lot more exciting places to be at the time.
Currently 5 months pregnant with hyperemesis gravidarum and a migraine. ☠️ This has cheered my heart to no end. 💜

I advise you to binge watch "Vicious" episodes. its a british sitcom with sir ian McKellen and sir Derreck Jacobi. its absolutely hilarious. all full episodes are on youtube. Laughing produces all kinds of good things in the brain which is very healthy. McKellen and Jacobi ( Stuart and Freddy) make insulting into an absolute art form.
These are like ASMR for me.

Woah, Mrs. Crocombe is on the roll. These more regular updates are giving me life!
'A picnic hamper for one' with 6 meat filled rolls, 8 small sandwiches, cookies, strawberries, cream, two bottles of lemonade and a bottle of wine. For a 2 hour train ride in between two homes with a private chef each.

I seriously have been wanting to put together a picnic for myself 👀
Watching these videos helps lowering my work stress.
I love how little wasted packaging there is, how everything is to be reused and built for purpose. If we lived this way, the summer now would not be so damned hot and dry.

Blame the big corporations that arose during the early 20th century. They encouraged wastefulness and excesses. Took away affordable public transport to force people to buy automobiles, began using forever chemicals in manufacture and did lots of harmful long-term things.

The trouble is, you dont have a man servent to carry around that large basket and 2 glass bottles. And you would have to carry it, without the ability to stash it in your car.
These videos are enough to lift my mood and calm my anxiety.
This series is such a delight, from the acting to the costuming, the research which is apparent, and the editing of the video. Much appreciation to all involved!
“It’s good to have a good relationship with your suppliers” briefly made me think our favorite aristocrats enjoy a toke or two. 😆🙃
If you're curious about the history and impact of the railways in Britain, there's an excellent BBC series called "Full Steam Ahead", starring Ruth Goodman, Peter Ginn, and Alex Langlands. It starts with the earliest small trains built for mines, and continues to the modern era. And one episode covers the railways' impact on the foods people ate---including at railway station cafés, when trains usually stopped for 10 minutes at each station, to allow passengers to have a very quick meal, or use the loo.

I came for the shade, but I'm staying for the food.
4:53 What upper-class train passenger would allow him or herself to be seen with mis-matched bottles? The indignity!
Mrs. Crocombe: " Oh no! Dear me!! this bottle isn't full I CANNOT POSSIBLY give it to the lord of the house!!! ABSOLUTELY NOT such great offense it'll be I'll just keep it aside then~ 😏"
This hit at just the right time for me. As my life is literally falling apart, the simple, quiet and joyful nature of this program, the orderliness of everything....just THANK YOU.

Mery Christmas, dear lady, and God bless you!
I can’t wait! This series is so good, excellent reenactors, production, editing, and shade!
I had to wait until this morning so I could enjoy my coffee while Mrs Crocombe creates a delightful picnic basket and throws shade at station refreshments. 😉
Thank you thank you thank you and everyone who works behind the scenes of these wonderful videos! 💖 You all have no idea of the happiness it brings me to watch another Ms Crocombe video in these times ❤
I'm an educated lawyer and this fabulous woman still makes me feel inadequate.... Love her❤️
I noticed that Ms. Crocombe has new bowls...though I did prefer the old ones she used. They were chipped yes but that shows they were used so often to make her dishes for Lady and Lord Braybrooke as they were quite popular.
Mr Strutt must have a healthy appetite indeed... All that food would be enough for the trip and a dinner and that even if you chose to feed your manservant too.
For sausage rolls you'll need: sausage meat and bread dough. Sandra Lee the victorian way 🤣
A pleasure as always! Congrats to Maryann on her glaze!
What a lovely looking picnic! I can just imagine sitting in the beautiful English countryside under a shade tree, reclining comfortably on a blanket and spending the afternoon with this gorgeous meal and a good book! 💖💖💖

Such an amazing talent that the world has fallen in love with. A delightful character brought back to life by a very special and talented lady. ❤
Man ! I love these videos. I had tests and written examinations at college, i was really frustrated and tensed. But Mrs. Crocombe's videos are so relaxing. Love the way she presents everything. Great production, Great Acting 🥰👍🏻 Thank you very much English Heritage 🙏🏻
I find myself watching Mrs. Crocombe's Victory Way how-to videos over and over again, especially when I'm eating. Somehow, the character and the music are very reassuring and soothing.
I love that we still gobble sausage rolls down. Granted they look different and almost certainly taste different but it's still a nice carryover.
Yea you save that extra bottle for your half day Mrs. Crocombe you absolute savage 🤟🏽
Mrs Crocombe never ceases to lift my spirits ! Can't wait!
*Mrs. Crocombe:* Oh no, this bottle isn't filled properly. I cannot let this go to waste, but I cannot let Lord Braybrooke's son have 3 partially filled bottles... (saves the not-filled bottle for her day off)
When tasting the raspberryade, did she use 2 spoons just so that Maryann would have to wash more? This woman’s shade is both subtle and incredible.
I recently joined a costumers meet up guild and we always have potlucks! This is a perfect Idea to bring along to share. Now to figure out how to make dough.

At the risk of bringing Mrs Crocombe's wrath upon me, there are packaged bread doughs ready to bake in the store. We've bought Rhodes yeast rolls and bread loaves as a shortcut (US). In fact, my spouse likes to take the thawed rolls and work them together to make a full loaf.
There's something so calming about the background music in these videos and watching Mrs.C ladle stuff into a bottle :)
I made the sausage rolls they where lovely! I've always done recipes the old fashioned way my nana used to always say "the old ways are the best ways." She was a cook for nearly 40 years in various areas so you can guess the food was amazing!
Love watching Mrs Crocombe as Autumn sets in. I still marvel how no one got ill with no refrigeration esp with meats. Thank you to the production company for these amazing videos.
