RECIPE
1 large English or seedless cucumber or 2 regular cucumbers
¼ cup rice wine vinegar
¼ teaspoon of salt
1 teaspoon of sugar or sugar substitute
2 tablespoons of toasted Sesame Seeds
1.Peel the cucumber with alternating strips.
2. Cut cucumber in half long ways. If using regular cucumbers, remove the seeds by running a along the cucumber to remove the seeds.
3.Cut the cucumbers using a mandolin as thin as possible. 1/8”
4.Take 2 paper towels, put cucumbers on them and push gently to remove excess moisture.
5. Put in a bowl with the vinegar, salt, sugar and sesame seeds
6. Mix and plate.
To Toast the Sesame Seeds
In a dry pan on medium heat. Stir the sesame seeds until they turn a light golden brown

In Malaysia also has this kind of dishes. We call it jelatah. Other than cucumber, we add thin-sliced onions with or without sliced pineapple. For those who likes spicy, they add sliced bird eye chilli.

@@KitchenDadsCooking I made some today. I made a smaller version of yours and it came out great. I used oranges instead of lemons. And I used peanut oil to. Thanks again for the recipe. Can you do more salad recipes please. I'm on a diet and I want to lose weight.
This is typical accompaniment with any fried fish or meat in Philippines . . . .in our house from when I was a little girl in the 50's till now (75 years old now) .

You'll do find with what you have or take a little time and just cut by hand
I don't like vinegar taste, so I changed it with lime/lemon juice. Taste so fresh, especially after chill in the fridge.

I made this, very good. I added a half tsp of sesame oil and some black pepper. I never eat anything savory without black pepper and I notice that you seldom use any.

In Japan, this dish is categorized as Su-no-mono (酢の物), the vinegared dish, one of the side dishes, not a salad. As we always eat the plain steamed rice with it, the strong acidic taste won't be so overwhelming. It means to be refreshing.

Love your Mom's Mandelan, what a treasure and thank you for sharing this recipe. Will try it😋 just be mindful of sea salt. Make sure it doesn't have plastic in it, outsides that.. good to go and can you add raisins for that sweet taste vs sugar, I find it is delicious alternative

Mindful of sea salt as well as Himalayan one…. Reasons only for its full of sulphur ..and many *DO* react to sulphur. Found that out in a painful way for my daughter. If you itch, have blotches of redness, an ulcer in your mouth you should know you react to sulphur and if you have had some things with these ingredients than you have your diagnosis plated 😃

I know salt is not great for our blood pressure and cholesterol but is an essential spice in everyday life. I read that Iodine Salt is better for us because our bodies need Iodine too regulate our water weight. It's hard to find anything with iodine in it. Now I use Iodized Salt for all my cooking and seasoning.

In England, we just add vinegar and pepper and refrigerate for 30 mins, we also do it with sliced onion. Make a great quick pickled cucumber and pickled onion. Fish and Chip shops leave a bowl on side of the counter to sprinkle on your F&Cs.

Yup, no fuss! Just seasoned rice wine vinegar and pepper added to the sliced cucumbers , refrigerate 1/2 hour before meal.

I grew up on this type of salad=side dish in America. We used celery seed instead of sesame seeds. Since we always had a garden, we added diced red tomatoes and whatever else we had a toast for.
So impressed that your mandoline is so well made. Could you post the product’s manufacturer? Would love to track one down.

Don't disagree with nutrition in the seeds but sometimes we are working toward a visual look also. Check out my other cucumber recipes where we keep the seeds in. Is tasty, there is 1/4 cup of rice wine vinegar. Thanks for watching!!

Thanks I made this and it was really good. But I found it too acidic. I later put some water and apples in it and that helped. Any thoughts on how to make it less acidic.

As the recipe is, it is a bit acidic. Great idea on the water and apples. Could add a little water and possibly some more sweetner of your choice. Might try a little honey and additional water.

Never used honey but sure it would be great at the "sweetness" ingredient in lieu of the dry sweetener.
