Oh, my gosh! I was raised in the south and my folks say, "I don't give a rip," all the time!!
Cucumber salad is one of my favorite things to eat in the summer. I also make it with sour cream, onions and vinegar, seasonings. Soo good. I was born and raised in Michigan, but also lived in several other states, some northern and some southern states.......” I don’t give a rip” was said in those states too. I don’t think it has anything to do with a southern saying that I am aware of. Back to the veggies... and herbs...My dad had a huge organic garden that was located near the lake with every type of vegetable, herbs, berries and even grape arbors. Yes he made fantastic wines. My mom would make pickles out of the baby cucumbers. I remember growing up on the lake and weeding the garden while the birds dive bombed me. Once I got too hot, I would jump into the lake to cool off. Sweet memories.
This is my new favourite salad recipe. I made this recently at a dinner party and everyone loved it - it was finished before everything else!
This guy is such a DORK!!! But I LOVE how he always screws up, laughs throughout and is friggin adorable! His kids must have lots of fun with him! I am a recent viewer...... :))

What’s DORK !! I can’t. Understand .. 👨🏼🍳👨🏼🍳
I made this and it was so much better than what I’ve made with cucumbers and onions before. Oh my, I love the dressing and soaking the red onions this way was extraordinary! We’ve had red onions chopped on ploughman’s platters before and I’ve searched and searched for them (how they tasted) and never could find them to purchase, but THIS was how they were prepared. Who knew? Thank you, this is a winner for several reasons.
Ahhh a classic summer salad. I once used a raspberry vinegar with out the herbs and it was fantastic. Also if you don't want the onion to be bitter soak the cut up onion in some cold water for a couple of minutes and then drain off the water. I do this for any salad I want raw onion in like chicken salad or tuna salad. I also like the English cucumbers like you, their peels are not bitter like those waxed ones and they have much less seeds in the middle. I swear I see this kind of cucumber salad at every Southern summer BBQ/Cookout! Love it!
cucumber, rice vinegar, dash of grapeseed oil, and lemon pepper is a great salad too
Dallas, TX born and raised. I have said, "I don't give a rip", numerous times! Mmmmm....pickled red onion 😍😍😍
I loved it with regular cucumbers 🥒! This salad is a family favorite now! Thank you!
Made this earlier today. It is BY FAR the best cucumber salad I've ever made, and I've made it many, many times. Thanks, John, this is my new go-to way to make cucumber salad.
When cutting onions, I turn on my kitchen ceiling fan. No tears at all.

I love it...I love it.... I love it.... I love it.... I love it....
I prepared this salad last week to take to a gathering. It worked out very well, and was exceedingly popular! I had time to let the ducks sweat longer, and did get more liquid removed. I finally finished the small amount of leftovers a few days later, and was really impressed with the amount of crunch that the salad still had. One more note: I increased the recipe by half, using 3 cucs etc, but needn’t have bothered increasing the amount of dressing. Definitely a make-again recipe! Thank you, John!

Thanks for the notes, can't wait to increase the amount of the recipe now! :D
I love the look of this salad 🥗 and the freshness of mix of cucumbers and mint.......yum!!
I know this video is YEARS old, but for Father’s Day my Dad made it easy & said, just order pizza…but, well…We need something to go with & I’m pretty sure this & you and your Mom making stuffed mushrooms are 2 of my favorite “go to” dishes. I live in a VERY small town in TX…have most of my life, and though “that housewife” was one of my favorites, I have never heard anyone but her say that. My favorite southern phrase is “well aren’t you precious”, if I’m not saying it to a baby, then it’s almost sure to be an insult…but nobody (unless you live here) knows that, and as a true southern, even our insults are nice…
I used to eat this in Germany. They often have marinated salads like this. Yum.
John--My children are now middle-aged. I STILL don't have enough time for friends and other activities, for now THEY have children and they ask for advice with parenting as well as for themselves. You NEVER stop being a parent. By the way...this recipe is very close to the recipe that was handed down through the Lithuanian side of my family.

Good timing for this recipe! I am growing a couple Persian and Japanese cucumber plants. Already getting quite a few nice ones. Thank you John!
I made this for our 4th of July get-together. It was a huge success. One thing that I did was gut the slices too thin, I will def be sure to cut them thicker so they stay a little firmer! Thanks John!
I made your cucumber salad for 4th of July everyone loved it
Watching from McKinney, Texas 5th generation native Texan. Yes. Texans say, “I don’t give a rip” 😂 Love your recipes, adore the Greek influences. One of my best days ever was sailing into the Caldera at Santorini on The Star Clipper.

Mary Turner - I was thinking the same thing! I was wondering, “Does John have a little room to grow some herbs? He sure could use an herb garden!” John, honey, I promise it’s not hard, you can even get these little indoor herb gardens now with lights, or do it in a sunny windowsill. Grow your own!
Nice summer treat.
Thanks Preppy Kitchen!😋
I love a fresh cucumber salad - so many options (add tomatoes? fennel? ) ... my mom always made hers with the addition of sour cream ... any way you make it, it is absolutely delicious !!!
I made this today and it was perfect!!! Thank you!
I must grow dill this spring in my herb garden…so many uses for it
Yep, we don't give a rip quite often! 👍 And omg, that looks so delicious. I love dill.
Easy, healthy, great salad.
KZread obviously knew that I needed this. New subscriber, from Houston, TX...never heard that expression used...EVER. Headed to the store to buy all of those ingredients for a cucumber salad for a BBQ I'm going to tomorrow. Thank you 😁
Thanks for sharing I love your videos the recipes always come good and the way you illustrate is so clear.
I'm a Texan and I've never said 'I don't give a rip!' Nor anyone in my family. The salad looks like a MUST try!

LOL, I wonder if it was just a saying she made up!
Thanks to your vid, I will now add mint whenever I make my new pickle! I pre-salt my thinly sliced cukes, put them in a strainer over a bowl, place a weighted saucer on top, and let them chill in my fridge for a half hour or more. I squeeze any remaining water out, and continue on with the recipe. The cukes turn out extra crispy, even after days in that sweet and sour brine! [Rushing to garden to pick some mint!]
I love cucumbers !! Def gonna try this :)
Looks delicious! I love a lot of dill too! I'm Texas born & raised and I've never heard that saying. I'm from Dallas.
ive tried this recipe i dont even like onions this made me change my mind. Love it . 👍👍👍
The four Japanese cucumbers that Baker Creek seeds sell are amazing..very high quality, prolific..
It came out delicious!! Thank you!
Looks quite simple and tasty!
My dad used to do this salad (minus the mint!): he would salt the sliced cucumbers and place them over a clean kitchen towel, then hang it like a bag from the kitchen faucet for half an hour or so. He would then squeeze the bag over the sink to get rid of the excess water and bitterness. It brings me fond memories!
amazingly beautiful and delicious perfection i love no music no taking because i am paying such close attention to your calm hands and reading the screen helps me remember steps thank you i am excited to make this for my family
made this today. Refreshing; cooling; tangy. I like it. Thanks! I added some tomato to mine and skipped the mint.
I dont know the SSL skit you reference but I burst out laughing when you did it!
Looks delicious!!
I just made this...and it is AmAZINg! Im going to make all your recipes.
My mandolin is calling for me to dust it off and make this salad. I love the idea of pickling the onions to take away some of the bite. Will have to make this and your spanakopita recipe this weekend for brunch.

This is one of my very favorite summer salads! ❤️
Made this tonight & OMGOODNESS!!! absolutely delicious.😋 Did not have the mint however I use a drop of mint extract. This will be a go to for me. 👍🏾
My grandmother used to make something similar but added chunked tomatoes (the kind that came from the garden - a REAL tomato) and a light bit of mayo. Then she put in the "icebox" to get really cold - perfect on a hot summer's day!
Love ❤️ it and I love salads
